Italian Sausage and White Bean Soup Recipe

I'm so jealous right now.  All around me so many of you have 17+ inches of snow and we have NOTHING!  Oh what I wouldn't give for a true white Christmas this year.  Anyway, I digress.  I said all that to say I am currently obsessed with two things Christmas and soup!  So that is what inspired me to make this Italian Sausage and White Bean Soup Recipe.  


I would like to tell you I created this recipe, but that would be a lie.  I came across this recipe in a Campbell's Cookbook many years ago and we instantly fell in love with it.  I'm sure this isn't their exact recipe because let's face it, we tweak things from year to year, but I know you are going to devour it so...

Let's Get Started!



One of the things I love about this recipe is that most of the ingredients are things you already have on hand.  For this Italian Sausage and White Bean Soup Recipe you will need:


  • 1 lb Italian Sausage
  • 1 Onion, diced
  • 4-6 Cloves, minced
  • 1 15 oz can on Cannellini Beans, drained and rinsed
  • 1 28 oz can of Diced Tomatoes
  • 1 tsp Dried Basil
  • 1 tsp Italian Seasoning
  • 6 c Chicken Broth
  • 1/2 c Elbow Macaroni, uncooked
  • 1 6 oz package of Baby Spinach
  • 1/3 c Grated Parmesan
  • Salt and Pepper, to taste


To get this Italian Sausage and White Bean Soup Recipe started you will need to add a little olive oil to a soup pot.

Place it over MEDIUM/HIGH heat and allow the pot to get hot.


Once the pan is hot you will remove the Italian sausage from its casing and add the the pot.
Cook until brown and not longer pink.


Now add the onion and garlic.

Cook until the onion is tender and translucent and you can smell the garlic coming from the pan.


Now add the basil and Italian seasoning.
I also added a tsp of Kosher Salt here.


When the sausage is fully cooked you can add the chicken broth,  


Beans,


And diced tomatoes.

Give everything a stir together,


Cover and let come to a simmer for 10-15 minutes.


After 15 minutes you can add the elbow macaroni.


Cover and cook for another 8 minutes.


Once the macaroni is fully cooked you can add the spinach and


Grated parmesan cheese.


Give everything a stir together, allow the spinach to wilt, and you are ready to eat!


Now only is this Italian Sausage and White Bean Soup hearty and flavorful, but can we talk about how Christmassy and festive those colors are?!?  It's just perfect for this time of year!  No matter what time of year you make this one thing is for certain, you're gonna love it so get in the kitchen and give it a try TONIGHT!

Italian Sausage and White Bean Soup Recipe

Ingredients

  • 1 lb Italian Sausage
  • 1 Onion, diced
  • 4-6 Cloves, minced

  • Salt and Pepper, to taste

Instructions

  1. Add some oil to a soup pot and place over medium/high heat. Allow the pot to get hot.
  2. Add the Italian sausage to the pot and cook until brown and no longer pink.
  3. Add the onion and garlic. Cook until the onion is tender and translucent and you can smell the garlic coming from the pot.
  4. Next add the basil and Italian seasoning, chicken broth, beans, and tomatoes. Bring to a simmer and cook for 10-15 minutes.
  5. Add the macaroni and simmer for another 8 minutes.
  6. Add the spinach, grated parmesan, and taste for seasoning.
  7. Serve and Enjoy!

I have to say that this recipe is truly delicious and my husband even preferred it to the restaurant version. I followed the recipe exactly with no modifications.   22. I veganized this with beyond meat sausage, vegetable broth, and used Parma - Better Than Bacon flakes instead of parmesan cheese. I doubled the noodle amount and used farfalle just because they are my favorite and I always feel like there are never enough noodles in soup.

    It would fool any non vegan, amazing recipes can usually be veganized and still be so delicious. Thanks for the amazing recipe!

  26. I made this today and it was delicious! I made the following modifications based on what I had on hand: Spicy Beyond Meat instead of sausage, kale instead of spinach and broken-up pieces of gluten-free taglione pasta instead of elbow macaroni. I followed all portions and all other ingredients according to the recipe. It was filling and hearty so it didn’t need a side salad or extra side veggie. My boyfriend said this soup should be on our cold-weather meal rotation! Thanks for posting this yummy recipe.

  27. This was absolutely delicious! I used 2 cans of beans. In the picture of all the ingredients used there is a small container with green herbs or? I also noticed in other pictures while adding everything to the pot it is obvious more green ingredients were added that are not listed. I am wondering what that additional ingredient is. Thank you.

    1. I'm not sure what you mean. There was no additional ingredient. The freeze dried basil floats to the top of the broth, so maybe you saw that? The only green items were the basil and the spinach.

  30. Just made this soup. It is delicious and hearty soup! The only things that I did different was I added the diced tomatoes that have garlic, basil and oregano in them and I used ditalini pasta. (I added approx 3/4 cup of pasta since they are smaller than elbows). I will definitely make this again!
