White Chicken Enchilada Casserole Recipe

INGREDIENTS:

  • 2 cups Fully Cooked Chicken
  • 2 cups Monterey Jack Cheese, shredded
  • 1 cup Sour Cream
  • 4 cup Chicken Broth
  • 2 Green onions, sliced
  • 4 oz Can of Green Chilies
  • 4 Tbsps Butter
  • 4 Tbsps Flour
  • 1 tsp Seasoning Salt
  • Salt and Pepper, to taste
  • Corn Tortillas





INSTRUCTIONS:
  1. Preheat the Oven: Preheat the oven to 350°F/175°C.
  2. Combine the Filling:  In a mixing bowl, add the chicken, shredded cheese, HALF of the sour cream, sliced green onions, and seasoning salt.  Mix until everything is well combined.  
  3. Prepare the Sauce:  Place a pan over medium/high heat and allow the pan to get hot.
    Melt the butter in the pan.  To the melted butter add the flour.  Whisk the flour into the melted butter and let it cook 1-2 minutes whisking continuously.  While whisking, slowly pour in the chicken broth into the pan.  You will see the sauce begin to form.  Bring the sauce to a simmer and let thicken, whisking continuously.  Once you get the sauce to a creamy consistency. add the green chilies, the other HALF of the sour cream, as well as salt and pepper to taste.  
  4. Assemble the Casserole:  Spread a thin layer of the sauce over the bottom of a 9x13 baking dish.  Layer 6 corn tortillas over the sauce.  Spread half of the chicken mixture over the tortillas.  Pour half of the sauce over the chicken.  Sprinkle some Monterey Jack cheese over the sauce.  Repeat the layers with the remaining ingredients.  Finish with a layer of shredded Monterey Jack cheese.  
  5. Bake:  Place in the preheated oven, uncovered, and bake for 25 minutes.  Feel free to place the dish under the broiler for a few minutes to get that beautiful brown and bubbly top.  Once it has finished baking remove it from the oven and let it rest for 10 minutes.  
  6. Garnish and Serve:  Let it cool slightly before serving.  Garnish with chopped green onions if desired.

  1. Four cups of broth is too much. The sauce would not get thick! It was a delicious soup though!
