It's Wednesday. We're only half way through the week and it's already been crazy! Throw in the fact that Studhubs and I are going on vacation next week, and I am feeling a little overwhelmed. It's on nights like this that I really don't want to mess with cooking. But, we gotta eat, and I have to make something, right? Yes. It's in times like these I turn to my mouthwatering Reuben Wrap Recipe.
Studhubs loves reubens. Like LOVES them. Any time we go to a sandwich shop you can guarantee that's what he is going to order. His mind must be fixated on them because the other day I was making breakfast burritos and he says to me "You know what would be good in a wrap? Reubens." I chuckled because of course that's what he would say, but then I was like "You know what? He's right." So I played around with the concept and what I came up with is the perfect weeknight, no fuss, sandwich meal! I can't wait to share it with you so ...

Reuben Wrap Recipe:
*Prep Time: 2 min. *Cook Time: 20 min. *Difficulty: Easy *Servings: 4 wraps
Ingredients:
- 1/4 lb. Thin Sliced Deli Corned Beef
- 4 Burrito Sized Tortilla Shells
- Swiss Cheese
- Sauerkraut
- Thousand Island Dressing
To begin preheat the oven to 350 degrees.
Place the tortilla shell on the counter and lay 3 pieces of cheese on it.
Then 2-3 pieces of corned beef.
A little sauerkraut.
And the thousand island dressing.
Now fold the sides over,
And roll!
It's okay if there is a little oozedge.
Place the wraps on a baking sheet and put into the oven for 20 minutes until the cheese gets nice and gooey.
And there you have it! Delicious Reuben Wraps in under 30 minutes! You can serve with roasted broccoli or some yummy baked sweet potato chips! It really is the perfect mid-week easy peasy meal and you are going to love it!
