Tom Racer's Sweet and Spicy BBQ Sauce

This week everyone is gearing up for our nations Independence Day Celebrations. 
 Around here that means one thing...GRILLING, and LOTS of it! 
That's right, I have a feeling more grills will be fired up Friday than on any other day this summer!  So here on The Kitchen Wife I am going to be talking about all things BBQ and to get things started, you can't have anything BBQ if you don't have a good sauce.  My dad, Tom Racer, is FAMOUS in our area for his BBQ sauce.  I can't tell you the times people have come to him asking if he will make his BBQ meatballs for their various events.  Therefore, if we are going to be BBQing this week, I have to share this recipe with you!  YOU ARE GOING TO LOVE IT!

Cheesy Mexican Rice

This past weekend we were so blessed to have my step-daughter and granddaughter staying with us. 
She is one hard working momma and I know that she doesn't get to do a lot of home cooking, so I wanted to make her something special.

I love the culture of my state. 
 In West Virginia, we are not southerners, we are not Yankees, we are just good ol' fashioned country people.

Well, for example, recently some friends of ours moved into a new home.  There was a lot to be done, and not a lot of time to do it in.  There were people coming to do some work in their house, and they were also getting ready to leave for vacation.  So what do country people do when they hear something like this?  That's simple...
"What can I bring you for dinner?" 

With one simple FB message, a weeks worth of meals were heading their way! 
Let me just tell you that does not happen everywhere, and it is one of the MANY reason I LOVE being a Mountaineer!

I have the sweetest husband in the world!
One thing that I love about him is his unwavering support of my kitchen dreams.
Recently I was watching the Food Network and one of the FN Stars used a curly fry cutter on their show!  I was instantly obsessed with wanting one, and did all but beg for it.  However, my husband wasn't biting.  Then, on Tuesday, a package came in the mail.  Low and behold that lovely man had ordered me the cutter!  You know that we HAD to have curly fries that very night!  They were so easy and DELICIOUS! I can't wait to share with you how I did it!

On busy weeknights, I will be the first to admit that I am tempted to fold and grab the easiest convenience food I can find.  Box, can, frozen, it makes no difference!  If it's quick and easy, I want it!  Who cares about the added salt and chemical preservatives!?! 
 Just give me a one pot meal in 30 minutes or less!

The thing is, these trusted convenience foods can often be made, at home, with things we ALREADY have on hand, in the SAME amount of time!  Today's recipe is the PERFECT example of that. 
You may never crack open a can again!

Classic Coleslaw

The air is warm, the sun is shining, and BBQ season is definitely upon us! 
Last week I shared my Apple Wood Smoked BBQ Pulled Pork, and NOTHING goes better with a nice BBQ pulled pork than a delicious Classic Coleslaw! 

I have to be honest with you, my husband and I have never been real fans of coleslaw. 
It seems to always be too wet, and the flavor can be a little bland, BUT this coleslaw recipe is a game changer and you are going to love it!

The internet can be such a great resource in the kitchen! 
Just as you are reading this blog for an idea for supper, I too, surf the web, in search of inspiration for recipes. 
Just the other day I was perusing Pinterest and came across a blog called Eat.Style.Play (The site can be found HERE.)  On her blog, this blogger had the most delicious looking sweet potato chips, and I thought "I have to make those tonight!"  However, I wanted to add my own twist to them, so I came up with a sweet and smokey BBQ seasoning for them! 
The chips were out of this world, and I can't wait to show you how I made them!
