I think I am probably more excited about this post than any other post to date! As I said yesterday, I have set a challenge for myself to utilize my pantry to make amazing meals with canned goods as my main ingredient!
Today's canned weapon of choice...
Chicken Noodle Soup!
As I looked at the can, I thought about the components. Chicken, noodles, carrots, celery, and broth. How can I turn this into something wonderful and filling for my family? Then, it hit me,
DECONSTRUCTED CHICKEN POT PIE!
*Prep Time: 2 min. *Cook Time: 10 minutes *Difficulty: Easy *Serves: 6-8
Here is what you will need:
- 4 cans of chicken noodle soup
- 1 can of peas (or peas and carrots if you don't have carrots in your soup)
- 1/2 a stick of butter
- 1/4 c. of flour
- Can of biscuits or toast
Tools you will need:
- Pot
- Whisk
- Toaster
First things first, melt your butter.
Add your flour...
And whisk, allowing the flour to cook for 1-2 minutes. This cooks all of the flour taste out of your roux.
Add your can of soup...
Bring to a simmer and allow it to thicken.
After about 3-4 minutes you will have a thick, creamy, and luscious gravy.
Add your peas. I am using frozen here, but canned will work fine.
Mix and...
Serve! I used toast here, but biscuits would be very nice!
You see, sometimes putting a great meal on the table is not about a lot of fancy and expensive ingredients. Often times it is just about looking outside of the can. This was delicious and to feed two people (with seconds) it was about $2 per person! Try it out and let me know what you think!!! And as always...
