INGREDIENTS:

  • 1 lb. of Ground Beef
  • 1 Onion, diced
  • 1 Tbsp Garlic, minced
  • 1 (1 oz) pack of  Taco Seasoning Mix
  • 4 cups Beef Broth
  • 1 (15 oz) can of Diced Tomatoes
  • 1 (15 oz) can black Beans 
  • 1 (15 oz) can of Corn
  • 1 cup Salsa
  • 1 lb pasta
  • 2 cups Cheddar Cheese, shredded








INSTRUCTIONS:

  1. Brown the Meat:  In a large pot or dutch oven, cook the ground beef over medium heat until browned.  Grain any excess fat. 
  2. Sauté Vegetables:  Add the diced onions and garlic to the pot.  Cook until softened, about 5 minutes.  
  3. Add Liquids and Seasonings:  Stir in the beef broth, diced tomatoes, corn, black beans, pasta, and taco seasoning.  Bring to a boil.
  4. Cook the Pasta:  Reduce the heat to a simmer, cover, and cook for 10-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.  
  5. Add Cheese:  Stir in half of the shredded Cheddar cheese until melted and creamy.  Season with salt and pepper, to taste.
  6. Serve:  Top with the other half of the shredded cheese and garish with fresh cilantro, a dollop of sour cream, and sliced jalapeños if desired!  Enjoy!





TIPS FOR SUCCESS:

  • Use Fresh Ingredients:  Fresh garlic, onions, etc enhance the flavor of this dish. 
  • Don't Overcook the Pasta:  Keep and eye on the pasta and stir occasionally to prevent sticking.  
  • Customize:  Feel free to add your favorite taco toppings such as diced avocado, crushed tortilla chips, or a squeeze of lime juice.
