Good News!  Studhubs and I survived Jonas, also known as Snowpacolypse.  We got about 16 inches of snow, which is nowhere near the 30 inches that many accumulated, but is a pretty significant amount for our area.  The entire town was shut down and we were snowed in for the weekend.  There was a lot of fuzzy blankets, Netflix, reading, naps, and FOOD! On days like this I LOVE making dishes like my Denver Omelet Casserole!

Vegan Lentil Soup Recipe

I don't know if I'm the only one out there this happens to, but towards the end of the month the fridge and the grocery budget begin to look a little bare. Or perhaps you simply have a few carrots and a couple of celery stalks that need to be used up after the holidays. It's in moments like these I head to my pantry to see what I can come up with, and it just so happened that the first thing I saw this time  were these gorgeous lentils that I had purchase at Whole Foods on a trip I had recently taken (yes, I visit grocery stores on vacations).  Immediately I thought to myself Vegan Lentil Soup!

Trust me when I say that just because this is a meatless recipe that doesn't mean it isn't satisfying.  In fact, I doubt that you will even miss the meat.  I absolutely love this soup and I can't wait to share with you how I made it.

Easy Vegetable Lasagna Recipe

We recently had our first snowy day of the winter.  It didn't really amount to much, but it made for a pretty backdrop.  Because it was so cold and blustery out, I really wanted something hearty and rib sticking for dinner.  For me, that usually means something like lasagna.  But since it is the new year, and I'm trying to be more mindful of what I eat, I decided to make an Easy Vegetable Lasagna.  All that great lasagna flavor, but something I don't have to feel QUITE as bad about eating.  

No one wants to be running out to the store on days like that, so it's at times like this I'm happy I keep my pantry stocked with great products, that have been simmered in tradition, such as Ragu Pasta Sauce. With farm grown ingredients and no artificial flavors, it is a product I trust.     I can have this Easy Vegetable Lasagna ready and on the table in no time!  I can't wait to share it with you so...

Ground Beef Wellington Recipe

Let me tell you a little bit about my typical Saturday morning.  Usually I get up, grab a cup of coffee, and head out to the couch, to spend my morning watching The Food Network.  Yep.  That's how I do it on Saturdays. And recently I was watching one show in particular where she was making Beef Wellington for her guests. It's a stunning dish, but let's be realistic, who can really afford a tenderloin for your everyday weeknight meal?  I know I can't.  That's when the wheels in my head started turning and I thought to myself "What if I did a play on Beef Wellington and used a ground beef mixture instead?"

Chicken Fajita Pasta Recipe

I love quick and easy meals.  You know the ones I'm talking about, those meals that literally come together in minutes.  No fuss, no muss.  It's for that very reason that I ADORE this Chicken Fajita Pasta.

Last week I had a couple of heavy blogging days and lost track of time.  Studhubs was due home from work, and I had NO IDEA what I was going to make for dinner.  So I found myself in the kitchen, staring at the fridge, lost.  I had some chicken thawed, a green pepper that I needed to use up, a lemon (man I need to go to the store), and then it hit me!  These are all the ingredients I would need for Chicken Fajitas!  Only one problem was I didn't have tortillas.  BUT, I DID have a TON of pasta and I thought "Why not, I'll make Chicken Fajita Pasta!"  It took a little creativity, but oh my stars y'all!  It was delicious and I cannot wait to share this one with you!

Can you believe it's January, and 2016!?!  Time really does fly doesn't it?  Well with that being said, I have a confession to make.  I'm not really a winter sort of girl. Nope. Give me sunshine and a hammock over the bitter cold any day.   However, this year has found me feeling a little bit differently.  This winter my soul seems to be longing for heaps of snow, fuzzy sweaters and warm comfort food to go with it.  And while I can't control the snow, I CAN promise you that my Chicken and Drop Dumpling Recipe is just what the doctor ordered in the food department.
