Easy Chicken Cacciatore Recipe

Easy Chicken Cacciatore or hunter's stew is one of my very favorite comfort food dishes.  So simple, but so rich and full of flavor.  It's absolutely perfect for these cooler, rainy, autumn nights we have been having in the Mid-Ohio Valley.


I know that the idea of "cacciatore" can feel a little intimidating, but it seriously couldn't be easier.  I know you are going to love it so...

Let's Get Started!

Easy Chicken Cacciatore:
*Prep Time: 15 minutes.  *Cook Time:  1 hour  *Difficulty:  Easy  *Servings: 4-6

Ingredients:


  •  2-3 lb. of Chicken Thighs, bone in and skin on. 
  • 1 lb. of Crimini Mushrooms, sliced
  • 1 Green Onion, sliced
  • 1 Onion, sliced
  • 4-6 cloves of Garlic, minced
  • 6 slices of Bacon, sliced and browned
  • 2 14.5 oz. Cans of Diced Tomatoes
  • 1 c. Dry White Wine
  • 2 tbsp. Honey
  • 1 tbsp. Capers
  • 1 tsp. Dried Basil
  • 1 tsp. Dried Oregano
  • 1/4 tsp. Red Chili Flake
  • 1 c. All Purpose Flour
  • Salt and Pepper to taste
To begin, preheat the oven to 350 degrees.  



Now slice the bacon into pieces and


Place into a cold skillet.

Turn the heat to medium/high and let the bacon brown and render it's fat.
Once browned remove it from the pan and place on a paper towel lined plate.


One of the things I hear a lot when it comes to big, slow cooking dishes, is that there is so much work involved and I don't have time.  To help with that, make sure you're utilizing every minute in the kitchen to the best of your ability.

While the bacon is browning, take that time to open your cans, measure out your liquids, and chop your veggies.  Taking these small steps will help keep big recipes manageable.


Once the bacon has browned you can make your dredge.
Place the flour into a shallow dish and season with salt and pepper.


Now pat the chicken thighs dry and season with salt and


Pepper as well.


Roll the seasoned chicken thighs in the flour dredge so that the entire thigh is coated.


Now add a little extra virgin olive oil to the pan and let it get hot.
Place the chicken thighs, skin side down, into the pan and let brown.
This will take about 2-3 minutes.
Once the skin side of the chicken is browned, flip and brown the other side as well.
When both sides are brown remove from the pan and place on a plate to the side.


To the hot pan add the onions, green peppers, and garlic.


Season with salt and


Pepper.


Add the basil,


Oregano,


And chili flake.


Next add the capers, stir it all together, and cook until the onions and peppers are soft and tender, about 3 minutes.


Now add the sliced crimini mushrooms to the pan.
Let them cook until they START to brown and become tender.
You want them to maintain their integrity while in the oven, so don't cook them down too much, just 1-2 minutes.


Now add the wine.
Let it simmer and reduce for about 2 minutes.


Add the diced tomatoes and


Honey.


Taste the cacciatore sauce for seasoning and add any salt and


Pepper you think it may need.


Top with the bacon and return the chicken, skin side up, to the pan.
The chicken cacciatore is now ready to cover and place into the preheated oven.


Cook at 350 degrees for 45 minutes.


This is what the easy chicken cacciatore will look like at 45 minutes.
Now leave the cover OFF and return it back to the oven.


Cook for another 15 minutes.


There you have it!  A Gorgeous Italian supper fit for a king, but so beautifully simple.  Crispy skin, tender, moist meat, savory sauce. I don't think it gets much better than this. It's these kinds of meals that I love to make on a Saturday or Sunday when you can just enjoy the cooking process and the aromas that fill your home.  I like to serve this with some mashed potatoes and some sauteed green beans, but it's great over pasta too.   I know that your family and friends are going to RAVE over this one pot meal of Easy Chicken Cacciatore so get in the kitchen and make it TONIGHT!  And as always...

Directions:
  1. Preheat the oven to 350 degrees. 
  2. Slice the bacon and add it to a cold pan.  Turn the heat to medium/high and cook until the bacon is browned and the fat is rendered. 
  3. Remove from the pan and place on a paper towel lined plate to the side. 
  4. Add a little extra virgin olive oil to the pan and all it to get hot. 
  5. To the hot pan add the green pepper, onion, garlic, capers, basil, oregano, chili flake, salt, and pepper.  Stir together until everything is coated with the seasoning and let the vegetables cook until tender.  
  6. Add the mushrooms and cook until they start to brown and become tender.  
  7. Add the wine and let simmer and reduce for 2 minutes. 
  8. Add the tomatoes and honey to the pan.  Stir and taste for seasoning. Add and salt and pepper you may think it needs.  
  9. Return the chicken, skin side up, to the pan. Top with the bacon, cover, and place into the preheated oven for 45 minutes.
  10. After 45 minutes uncover the dish and cook for another 15 minutes. 
  11. Serve and enjoy!

  1. You've done it again Mandee! This looks like a recipe I can make. I agree with making a meal like this on a Sat or Sun... I'm less in a hurry then so it's less of a "chore" :)

  2. I enjoy offer the following by using quite a few mashed potatoes as well as some sauteed inexperienced cocoa beans, nonetheless it is really superb through pasta very.
