  • 1 lb of Breakfast Sausage
  • 1 cup of Instant Rice
  • 1 Green Bell Pepper, finely diced
  • 1 Red Bell Pepper, finely diced
  • 3 stalks of Celery, finely diced
  • 1 Onion, finely diced
  • 1 Tbsp Garlic, minced
  • 1 Tbsp Cajun/Creole Seasoning
  • 2 cups Chicken Broth
  • Salt and Pepper, to taste
  • Sliced Green Onions to top with, optional





INSTRUCTIONS:
  1. Sauté the Vegetables:  In a large skillet over medium heat, add the chopped onion, bell peppers, and celery.  Sauté until softened, about 5 minutes.  Add minced garlic and cook for another minute.  
  2. Cook the Meat:  In the same skillet, add the sausage and cook until brown and no longer pink.  
  3. Add the Rice and Seasonings:  Stir in the rice and Cajun seasoning.  Cook for 1-2 minutes, allowing the rice to toast slightly.  
  4. Combine and Simmer:  Pour in the chicken broth.  Bring to a boil, then reduce heat to low.  Cover and simmer for 5 minutes.  After 5 minutes, remove from the heat and let sit another 5 minutes.  
  5. Season and Serve:  Remove the lid and give everything a stir.  Taste for seasoning and make any adjustments you feel it needs, and top with the sliced green onions.  Serve hot as a side or main dish.

  2. I am a former manager of Shoneys here in Arizona and we made our sausage rice entirely different. Shoneys permanently closed here in 1998, but there were several still running across the US. I wonder if they changed their recipe?
