Homemade Hamburger Helper: A One-Pot Comfort Classic (No Box Required!)

Hey y'all and welcome to my West Virginia kitchen!  Growing up I was blessed to rarely eat a meal that wasn't made from scratch.  My dad was an amazing cook and enjoying cooking for his family.  But every once in a while we would have a treat of that iconic boxed pasta.  You know the one.  It had the cute little gloved mascot.  That's right Hamburger Helper.  


Well today we are ditching the cardboard and cooking up the same creamy, beefy goodness completely from scratch-loaded with real veggies, melty cheese, and ready in 25 minutes!  Your weeknight supper just went from "meh" to mouthwatering!  I can't wait to share it with you so...

INGREDIENT LINE-UP:





  • 1 lb Ground Beef (sub turkey or plant-based crumble)
  • 2 Tbsp Olive Oil
  • 1 Onion, diced
  • 1 Green Bell Pepper, diced
  • 1 Tbsp Garlic, minced 
  • 1 (24 oz) jar of Marinara Sauce (or homemade)
  • 6 oz (1/2 bag) of Egg Noodles (or any short pasta rotini, shells, etc)
  • 1 Bunch (or 1 cup Frozen) Spinach, finely chopped
  • 1 cup Shredded Cheddar Cheese 
  • 1 cup Parmesan, grated
  • Salt and Pepper, to taste





STEP-BY-STEP:  HOW TO MAKE HOMEMADE HAMBURGER HELPER:
  1. Sizzle & Season:  Heat oil in a deep skillet over medium-high heat.  Add ground beef, breaking it up.  Season liberally with salt and pepper.  Cook 5 minutes until browned.  
  2. Veggie Boost:  Stir in diced onion, green pepper, and garlic.  Sauté 3 minutes until onions are translucent and fragrant. 
  3. Sauce it Up:  Pour in the marinara sauce plus 1 cup water (swish to rinse the jar clean).  Bring to a gentle boil.  
  4. Noodle Time:  Stir in egg noodles.  Reduce heat to medium, cover and simmer 8-10 minutes, stirring once or twice, until noodles are tender.  
  5. Greens and Cheese, Please:  Fold in spinach until wilted (1 minute).  Sprinkle cheddar and parmesan over the top.  Cover 2 minutes until melty.  Taste, adjust seasoning, and serve!

TIPS, TRICKS, AND FLAVOR TWISTS:
  • Keep it Creamy:  If sauce thickens too much before noodles cook, splash in 1/4 cup water or broth.

FAQs:

Can I make it dairy-free? 

Yep!  Use your favorite plant-based shreds or skip the cheese and stir in 1/4 cup nutritional yeast for nutty flavor. 

Do I have to use egg noodles?

Not at all.  Elbows, rotini, or shells love this sauce; just match the package cook time.  

HELP!  My noodles aren't cooking.

Lids are key.  Keep the pot covered so steam cooks the pasta.  If they are still firm, add 1/4 cup extra water and simmer 2 more minutes. 

Is this freezer friendly?

Absolutely!  The sauce keeps noodles from drying out.  Thaw, add a splash of marinara or broth, and reheat slowly for best texture.
