Easy One Pot Veggie Pasta Recipe


Hello Friends!  It has been a while since I last posted.  As I'm sure you know life has been, well...CRAZY!  I don't think I need to get into the details of everything, but one thing I have gotten pretty good at are quick easy and inexpensive meals.  Take this Easy One Pot Veggie Pasta Recipe for example.  


Made with simple ingredients you most likely already have on hand, this pasta is quick, healthy and ready in the time it takes you to boil the pasta LITERALLY.  I can't wait to share it with you so...

Let's Get Started!
For this Easy One Pot Veggie Pasta you will need  a few simple ingredients:

  • 1 lb Pasta (any kind will do)
  • 16 oz bag of Frozen Mixed Vegetables
  • 4 c Vegetable Broth
  • 1 Tbsp Lemon Pepper Seasoning
  • Salt and Pepper to taste
  • 1 c Parmesan Cheese, grated (I used the Violife vegan kind.)

To begin you will pour the vegetable broth into the pot and add enough water to boil the pasta in.
This just adds a lot of flavor to the pasta itself.  


While you are waiting for the water to come to a boil go ahead and grate your parmesan cheese.
As I said before I used to Violife vegan parmesan wedge.  


Once the water comes to a boil Add the pasta and...


The bag of frozen vegetables.  

Cook according to the directions on the pasta packaging.  


OH!  Before I forget, You will want to reserve a coffee mug for of the pasta water.  


When the pasta is fully cooked drain. 


Return the drained pasta to the pan.


Add the lemon pepper seasoning and salt.  

I don't add any pepper until the end because the lemon pepper seasoning has quite a bit on it's own.


Add the grated Parmesan cheese to the pan. 


Add the reserved vegetable broth to the pan and toss to create a nice sauce with the grated cheese.  

Taste for seasoning and plate it up!


I like to add just a touch more grated parmesan cheese to top things off, but other than that it's a perfect meal.  Serve it up with a nice side salad and watch your family devour it!  Oh, and don't forget, it's ready in about 10 minutes!  I know you're gonna love this Easy One Pot Veggie Pasta Recipe so give it a try tonight!

Easy One Pot Veggie Pasta Recipe

Ingredients:

  • 1 lb Pasta (any kind will do)
  • 16 oz bag of Frozen Mixed Vegetables
  • 4 c Vegetable Broth
  • 1 Tbsp Lemon Pepper Seasoning
  • Salt and Pepper to taste
  • 1 c Parmesan Cheese, grated (I used the Violife vegan kind.)

Instructions:

  1. To begin you will pour the vegetable broth into the pot and add enough water to boil the pasta in. 
  2. Once the water comes to a boil add the pasta and bag of frozen vegetables. 
  3. Cook according the directions on the package. 
  4. When the pasta is finished cooking reserve a cup of the cooking water and drain the pasta. 
  5. Return the pasta and vegetables to the pan.
  6. Add the seasonings, grated cheese, and reserved cooking liquid.  
  7. Toss everything together. 
  8. Serve and Enjoy!
