Vegan Teriyaki Tempeh Stir Fry Recipe

At the time of writing this post we are in the middle of the COVID-19, worldwide, pandemic.  So many of us are under a state mandated , and going out is very limited.  Its because of this I think it's safe to say we are looking for cost effective ways to cook from our pantries.  I am no different.  That's why there is nothing I love more than a good stir fry!  This Vegan Teriyaki Tempeh Stir Fry Recipe is my new favorite go to.

For this Vegan Teriyaki Tempeh Stir Fry Recipe you will need a few simple ingredients:

The ingredients needed to make the teriyaki tempeh stir fry recipe.

  • 1 8 oz block of Tempeh
  • 1 bag of your favorite Vegetable Stir Fry mix.  
  • 1 c Low Sodium Soy Sauce
  • 1 c Vegetable Broth (or water)
  • 1 Tbsp Toasted Sesame Oil
  • 1 Tbsp Rice Wine Vinegar
  • 1/4 c Brown Sugar
  • 1 tsp Garlic Powder
  • 1/4 tsp Ground Ginger
  • 1 Green Onion, Sliced
  • 2 Tbsp Cornstarch

To begin cut your block of tempeh into three parts.

In case you are not familiar with what tempeh is, it's a cake-like substance made from cooked and slightly fermented soybeans. This fermentation helps to break down the phytic acid in soybeans, making the starches in tempeh easier to digest.

Next, bring your vegetable broth (or water) to a boil.

Add the tempeh and boil for 10 minutes.

This helps to season and soften the tempeh to make it more palatable.

Remove the tempeh from the liquid and sit to the side.

**DO NOT DRAIN THE BROTH FROM THE POT**

Now it's time to make the teriyaki sauce.  Before you ask, yes, you can use your favorite jarred sauce.  I just didn't have any so I made my own.

In a mixing bowl combine the soy sauce, sesame oil, brown sugar, garlic powder, ground ginger, and green onion.  Whisk together until smooth.

Add to the left over vegetable broth and bring back to a boil.

Combine the cornstarch with a little bit of water to create a slurry

While the sauce is coming to a boil, combine with cornstarch with a little cold water to make a slurry.

Once the sauce comes to a boil add the slurry to the sauce and let simmer until it reaches your desired thickness.

Once the sauce is how you want it, remove from heat.

Now add a pan over HIGH heat and add a little oil.

Slice the tempeh into 1/4 inch thick strips.

Place in the pan, season with salt and pepper, and brown for 2-3 minutes on each side until golden and slightly crisp.

Remove the browned Tempeh from the pan.

Now add the frozen vegetables and cook according the in instructions on the package.

The tempeh added back to the pan.

Add the tempeh back to the pan, pour the sauce over everything and toss until coated.

Instructions:

How to cook Vegan Teriyaki Tempeh Stir Fry Recipe

  1. Cut the tempeh into three parts. 
  2. Bring the vegetable broth to a boil and add the tempeh to it.  Cook for 10 minutes.
  3. Remove the tempeh from the broth.  DO NOT DRAIN THE BROTH.
  4. In a mixing bowl combine the soy sauce, sesame oil, rice wine vinegar, brown sugar, garlic powder, ground ginger, and sliced green onion.  Mix together.
  5. Pour the sauce mixture into the vegetable broth you cooked the tempeh in and bring to a boil.
  6. Mix together the cornstarch with a little cold water to make a slurry.  
  7. Add the slurry to the boiling sauce and allow it to simmer until it reaches your desired thickness. 
  8. Remove from heat. 
  9. Place a pan over HIGH heat and add a little oil.
  10. Slice the tempeh into 1/4 inch thick slices.
  11. Add to the hot pan and brown on each side for 2-3 minutes.  Remove from apn. 
  12. Add the bag of frozen vegetables to the pan and cook according to directions. 
  13. Return the tempeh to the pan and turn off the heat. 
  14. Pour the sauce into the pan and toss everything until coated. 
  15. Top with some sliced green onion and cashews. 
  16. Serve over rice and ENJOY!
