Ritz Cracker Chicken Bake Recipe

I can't believe I'm saying this, but it's Back To School season once again and I know all you mammas and daddies out there are trying to adjust back to the busy routines while getting dinner on the table.  That's why this month I am focusing on easy inexpensive meals that the whole family will love.  I can't think of a better way to kick off this series than with this DELICIOUS Ritz Cracker Chicken Bake Recipe.

The finished pan of Ritz Cracker Chicken Bake on the counter with the title above.

This all-in-one meal only requires a few simple ingredients and while it bakes you have time to get some other things done.  I know you're gonna love it so...

Let's Get Started!

For this Ritz Cracker Chicken Bake Recipe you will need a few simple ingredients:

The ingredients needed to make the Ritz Cracker Chicken Bake recipe.

  •  4-6 Thinly Sliced Boneless, Skinless Chicken Breasts
  • 1 cup of Sour Cream
  • 1 10 oz can of Cream of Chicken Soup
  • 1 15 oz can of Mixed Vegetables, drained
  • 2 cups Shredded Cheese
  • 1 sleeve of Ritz Crackers, crumbled
  • 1 Stick of Butter, Melted
  • Salt and pepper, to taste
To begin you will need to preheat your oven to 350 degrees.

Boneless Skinless chicken breasts, cut in half, on a cutting board with the knife.

I HIGHLY recommend thinly sliced chicken for this recipe, but if you don't have that on hand no worries.  Just simply slice your chicken in half as I did here.

Seasoning the chicken with salt.

Place the chicken into a greased baking dish and season with salt and ...

Seasoning the chicken with pepper.

pepper.

Mixing the can of mixed vegetables and sour cream together in a yellow bowl with a rubber spatula.

In a mixing bowl combine the cream of chicken soup, sour cream, and can of mixed vegetables.

Again, I recommend frozen mixed vegetables, but I didn't have that on hand and the canned worked great!

Spreading the vegetable and sour cream mixture over the chicken in a baking dish.

Spread the mixture over the chicken in the casserole dish.

Shredded Cheese sprinkled over the casserole.

Next, top the casserole with the shredded cheese.

I know what you're thinking.  "Mandee, why wouldn't you put the cheese on top!?!"  Well, the answer is easy.  This layer of cheese creates a barrier between the sauce and cracker topping.  This way the crackers do not get soggy during the cooking process.

An entire sleeve of Ritz Crackers crumbled.

Now it's time for the fun part, crushing the crackers.

I recommend doing this OVER the casserole dish and invite the kiddos to join in!

The crumbled ritz crackers sprinkled over the casserole.

Sprinkle the cracker topping over the casserole.

Melted butter poured over the ritz crackers.

Drizzle the melted butter over the cracker topping.

The Ritz Cracker Chicken Bake in the oven.

Now place the Ritz Cracker Chicken Bake in the oven.

The oven is set to 350 degrees with a 45 minute timer.

Bake for 45 minutes to 1 hour.

I ended up baking mine for an hour.

The finished pan of Ritz Cracker Chicken Bake.

And there you have it, a gorgeous Ritz Cracker Chicken Bake!

A piece of the Ritz Cracker Chicken on a white plate with cucumbers and cherry tomatoes on the side.

Look at that beautiful golden topping!  Even though there are vegetables in this dish I like to serve mine with a crisp salad or fresh veggies such as cucumber and tomatoes.  This help break up the richness of the casserole.

A bite of the Ritz Cracker Chicken on a fork.

And just so you know...this chicken is tender, juicy, full of flavor, everything you want your chicken to be!

I know you and your entire family are going to love this dish so get in the kitchen and give it a try TONIGHT!  And as always...
