One Pot Creamy Chicken and Vegetable Pasta Recipe

I know it's easy to look at food bloggers and think they never struggle with what to make for dinner, they never struggle with ideas to keep things fresh and creative, they never struggle period.  You're wrong.  We struggle.  I'm just like you, I'm trying to get dinner on the table as quickly as possible, and if it can be remotely healthy, even better.  So when I saw this recipe for Chicken and Green Bean Pasta on my friend Amanda's YouTube channel, This Crazy Life I immediately wanted to make it and share it with you.

I did, however, add a few of my own Kitchen Wife touches and also made it a true one pot meal.  I know you are going to LOVE this One Pot Creamy Chicken and Vegetable Pasta so...

Let's Get Started!


One of the things I loved about this meal is that the ingredients are simple and inexpensive.  You may even have them on hand.  For this Creamy Chicken and Vegetable Pasta you will need...

All of the ingredients needed to make the creamy chicken and vegetable pasta recipe.

  • 3 Sliced of Bacon, diced
  • 2 Boneless, Skinless Chicken Breasts, cubed
  • 2 carrots, peeled and diced
  • 1 12 oz bag of Cut Frozen Green Beans
  • 1 lb Penne Pasta
  • 4 c Chicken Broth
  • 2 c Water
  • 2 c Half & Half
  • 1/2 c Parmesan Cheese, grated
  • 1 tsp Lemon Pepper Seasoning
  • 1 tsp Kosher Salt

The carrots, bacon, and chicken diced on a cutting board.

To begin you will need to prep your meat and carrots.

Next, add the bacon to a COLD pan and turn it on to MEDIUM/HIGH heat and let the bacon crisp and the fat render.

You will want to make sure this pan is big enough to make this LARGE pasta dish in.

Once the bacon is crisp and fully cooked, remove it from the pan and sit to the side for later.

The uncooked chicken, in a bowl, with salt and pepper on it.

Season the cubed chicken with a little salt and pepper.

Add to the pan and cook until the chicken is brown and no longer pink.

The carrots and chicken cooking in the pan.

Add the carrots to the pan and cook for 3-4 minutes.

The uncooked pasta in the pan with the chicken and carrots.

Now add the uncooked pasta to the pan.

The chicken broth and water in a pan with the cooked chicken, pasta, and carrots.

Add the chicken broth and water to the pan.

The pan on the stove with the lid on it.

Cover and cook for 15 minutes.

The frozen green beans in the pan with the cooked pasta, chicken and carrots.

Once the pasta is fully cooked, add the frozen green beans.

Half and half being poured in to the pan with the green beans, cooked chicken, pasta, and carrots.

Add the half and half.

The lemon pepper seasoning being added to creamy one pot chicken and vegetable pasta.

Add the lemon pepper seasoning.

Grated parmesan being added to the creamy chicken and vegetable pasta.

And finally, and the grated parmesan.

Stir everything together and let simmer for a few minutes until the sauce thickens.

Top with a little more parmesan cheese and the cooked bacon.

I love how easy this meal is to make because it is made all together in one pot.

One Pot Creamy Chicken and Vegetable Pasta Recipe

This One Pot Creamy Chicken and Vegetables Pasta Recipe is any busy parents dream meal. Quick, easy, and inexpensive the whole family is gonna love it!
prep time: 15 minscook time: 45 minstotal time: 60 mins

ingredients:


  • 3 Slices of Bacon, diced
  • 2 Boneless, Skinless Breasts, cubed*
  • 2 Carrots, peeled and diced
  • 1 12 oz bag of cut Frozen Green Beans
  • 1 lb Penne Pasta
  • 4 c Chicken Broth
  • 2 c Water
  • 2 c Half and Half
  • 1/2 c Parmesan Cheese, grated
  • 1 tsp Lemon Pepper Seasoning
  • 1 tsp Kosher Salt
  • 1/2 tsp Ground Black Pepper

instructions


  1. Prepare the chicken and carrots.  
  2. Place the uncooked bacon into a COLD pan and turn the heat to MEDIUM/HIGH.  Let the bacon cook until crisp and the fat has rendered.  
  3. Remove the cooked bacon from the pan and sit to the side for later.  
  4. Season the cubed chicken with salt and pepper.  Add to the pan and cook until brown and no longer pink, about 10 minutes.  
  5. Add the carrots to the pan and cook for 3-4 minutes.  
  6. Add the uncooked pasta to the pan along with the water and chicken broth.  Cook for 15 minutes.  
  7. After the pasta is fully cooked, add the green beans, half and half, grated parmesan, and lemon pepper seasoning.  Stir everything together and let simmer for 5 minutes.  
  8. Top with the crispy bacon and a little more parmesan cheese.
  9. Serve and Enjoy!

NOTES:

* You can use dark meat chicken if you so desire.
