Vegetable Mei Fun Recipe

There is a Chinese take-out place in my hometown that I love.  One of my favorite dishes there is called Vegetable Mei Fun.  Basically it is a vegetable stir-fry dish that uses thin rice or Mei Fun noodles instead of rice.  It literally takes minutes to prepare and you may never go for take out again after you give it a try so let's get started!

Vegetable Mei Fun:
*Prep Time: 5 min.  *Cook Time:  16 min.  *Diffictuly:  Easy *Servings: 4-6

Ingredients:

I didn't realize that I had grabbed the peas instead of the broccoli until AFTER I had chopped everything. Sorry :)

  • 1/2 of a package of Mei Fun Noodles
  • 2 c. of Frozen Broccoli Florets, thawed.  
  • 1 Red Bell Pepper, julienned
  • 1 Red Onion, sliced
  • 2 Carrots, peeled and julienned
  • 2 eggs
  • 4-6 cloves of garlic.  
  • 2-3 tbsp. of oil
  • Water


I know I am a bit of a broken record with this, but when you are cooking Asian food you MUST have everything prepped in advance.  It is fast cooking at high heat and you will need to be able to work quickly.


After that place a some water on the stove and bring to a boil.


Place a skillet over high heat and


Add some oil.  Let the oil and skillet to get HOT!


Crack the eggs into the skillet and season with salt and pepper.


Scramble them up with your spatula.


Once they are fully cooked remove them from the skillet and set to the side.


You may need to add a little more oil to your pan.


Then add the onions, carrots, peppers, and garlic to the pan.


Season with salt and


Pepper and cook for 5-6 minutes until the vegetable begin to get tender.


Add the broccoli and ...


Return the egg to the pan.  Cook for 5 minutues, just to heat the broccoli through.
You don't want the vegetables to be soggy here.  Just tender.
After you have heated the broccoli through, remove the vegetables to a plate and set to the side.


Now you can add the mei fun noodles to the pan and add enough hot water to just cover the noodles.


Bring to a boil and let the noodles cook until the water has absorbed, about 6 minutes.


Return the vegetables to the pan and toss.


And there you have it!  A BEAUTIFUL Vegetable Mei Fun that is flavorful and full of color.  Serve this to your friends and family with some chop sticks on the side and dinner has just become an event.  Or, make this for yourself one night, pop in a great movie, and it is the perfect night in.  Either way I know you are going to love this dish so get in the kitchen and make it TONIGHT!
