Easy One Pot Taco Mac and Cheese Recipe

When I'm busy, I'm looking for a few simple components in a meal.  One, it has to be delicious and something everyone will eat it.  Two, it has to be fast and easy, with simple ingredients.  And finally three, it requires as few dishes as possible!  I am so happy to say that this recipe for Easy One Pot Taco Mac and Cheese ticks off all those boxes!

All the great flavors of those yummy tacos we love, ready in about 30 minutes with ingredients you may already have on hand.  Oh! And did I mention its made in ONE POT!  You can't go wrong with this Easy One Pot Taco Mac and Cheese Recipe.  I know you're gonna love it so...

Let's Get Started!

For this Easy One Pot Taco Mac and Cheese Recipe you will need these simple ingredients:

All the ingredients needed to make the Taco Mac and Cheese.

  • 1 lb Ground Beef
  • 1 lb Elbow Macaroni
  • 1 cup Salsa
  • 1 cup Corn, fresh or frozen
  • 1 15 oz can of Black Beans, drained and rinsed
  • 1 Onion, finely diced
  • 1 Green Bell Pepper, finely diced
  • 1 Tbsp Garlic, minced
  • 4 cups Chicken Broth
  • 2 Cups Water
  • 3 Packs of Velveeta Cheese Sauce

To begin you will place a large pot such as a dutch oven over a medium/high heat.
Add some oil and allow the pan to get hot.

Sauté until the vegetables are tender and the onion is translucent, about 2-3 minutes.

Now add the ground beef and cook until brown and no longer pink.

The water and chicken broth added to the dutch oven.

Add the chicken broth and water to the pot as well.

Everything being stirred together with a wooden spoon.

Give everything a stir and bring to a boil.

Once boiling drop the heat to a simmer, cover and let cook for 10-15 minutes until the pasta is cooked to your liking.

Make sure to stir the pot occasionally.

Once the pasta is finished cooking it should look like this.

There will be a little liquid in the pot, but that is okay.  It will make the sauce even better.

You could totally make your own cheese sauce here, but for times sake I love picking up these Velveeta cheese sauce packets.  They are quick, easy, and delicious and I think it's a great kitchen hack!

How to cook Easy One Pot Taco Mac and Cheese Recipe

  1. Place a large pot over medium/high heat.  Add a little oil and allow the pot to get hot. 
  2. Add the pepper, onion, corn, and garlic to the pan.  Sauté until the vegetables are tender and the onion is translucent. 
  3. Add the ground beef to the pan and cook until brown and no longer pink. 
  4. Add the salsa, black beans, chicken broth, and water to the pot. Stir everything together and bring to a boil. 
  5. Once at a boil, lower the heat to a simmer, cover, and cook for 10-15 minutes until the pasta is cooked to your liking, stirring occasionally.  
  6. Add the cheese sauce packets and stir.  
  7. Add your favorite taco toppings
  8. Serve and Enjoy!
