Easy Chicken a la King Recipe

The other night Studhubs and I had some newish friends over for dinner.  I wanted to make something nice, but not too fussy.  Oh, and I wanted it ready to eat in under 20 minutes.  That's impossible you say!  I respond with no, not when you have my Easy Chicken a la King Recipe in your back pocket!

It sounds super fancy, but it couldn't be easier and on the table in mere minutes!  I know you're gonna love this one so...

For this Easy Chicken a la King Recipe you will need a few simple ingredients:

  • 2 cups Chicken, fully cooked
  • 8 oz package of Mushrooms, sliced
  • 16 oz Heavy Cream
  • 2 cups Chicken Broth
  • 1/2 Salted Butter
  • 2 Tbsp Cornstarch 
  • 1 cup Pimentos
  • 1 cup Frozen Peas
  • Salt and Pepper, to taste

To begin place the butter in a pan and melt.

When the butter has melted add the mushrooms to the pan and sauté for 5 minutes until golden brown.

Bring to a simmer.

When the broth and heavy cream have come to a simmer, you will combine the cornstarch with some water to create a slurry.

Pour the slurry into the cream and broth mixture.

Let simmer until the sauce thickens like a gravy, stirring occasionally.

Now add the precooked chicken.

*I always like to have to cooked chicken in my freezer for busy nights like this.  I just cooked this up in my instant pot with a cup of chicken broth on MANUAL for 30 minutes the day before.*

Stir everything together and simmer just long enough to heat the chicken and peas through.

How to cook Easy Chicken a la King Recipe

  1. Place the stick of butter into a pan on the stove and melt. 
  2. Once the butter has melted add the mushrooms.  Cook for 5 minutes until golden brown. 
  3. Add the chicken broth and heavy cream and bring to a boil.
  4. Combine the cornstarch in a small dish with some water and add to the pan.  Allow the sauce to thicken while stirring occasionally.  
  5. Once thick like a gravy add the chicken, pimentos, and peas.  Cook until the chicken and peas and chicken are heated through.  
  6. Serve over rice, noodles, or mashed potatoes.
  7. Enjoy!
