White Chicken Enchilada Casserole Recipe

I'm not exaggerating when I say that this has been one of the coldest, most brutal, winters we've had in a while.  And yes, with that comes its fair share of negativity.  However, in the spirit of making lemonade out of lemons, I've been taking this time to indulge in all things comfort foods, and this White Chicken Enchilada Casserole has been at the top of the list!  


With layers of tender chicken, gooey cheese, and a warm and spicy white enchilada sauce, these White Chicken Enchiladas are going to have you wanting to stay in a little longer!

Let's Get Started!



White Chicken Enchilada Casserole Recipe:
*Prep Time: 30 min *Cook Time: 30 min *Difficulty: Easy *Servings: 6-8 

Ingredients:

  • 2c Fully Cooked Chicken
  • 2c Monterey Jack Cheese, shredded
  • 1c Sour Cream
  • 4c Chicken Broth
  • 2 Green onions, sliced
  • 4oz Can of Green Chilies
  • 4 Tbsps Butter
  • 4 Tbsps Flour
  • 1 tsp Seasoning Salt
  • Salt and Pepper, to taste
  • Corn Tortillas
To begin you will need to preheat your oven to 350. 



While your oven is preheating you will put together the filling.  Place the FULLY COOKED chicken in a bowl.


To the chicken you will add 1/2c of the sour cream and...


1c of the shredded Monterey Jack cheese.
Make sure you reserve some of the cheese for the top of the casserole when you are finished.


Now add the sliced green onion and...


the seasoning salt.


Stir everything together and taste for seasoning.  I added just a little salt and pepper here.


Now let's work on our sauce!
Place a pan over medium/high heat and allow the pan to get hot.
Melt the butter in the pan.


To the melted butter you are going to add the flour.


Whisk the flour into the melted butter and let it cook 1-2 minutes while whisking.


Now, while whisking, slowly pour in the chicken broth.


Bring the sauce to a simmer and let thicken.


You will want to continue whisking as it thickens.


Now it's time to add the can of green chilies and...


Sour Cream.


Whisk together until smooth.


Now you can taste for seasoning make the appropriate adjustments.


Next you will spray a casserole dish with cooking spray and add a THIN layer of the sauce on the bottom of the dish.


Time to build this casserole!
First, place a layer of corn tortillas on the bottom of the dish.


Now add the meat mixture to the dish.


Now place a layer of sauce over the meat mixture.


Add another layer of corn tortillas.


Then, the rest of the sauce.


Now sprinkle the rest of the cheese over the top.


Place in the preheated oven.


I bake mine for 25 minutes.


Then I like to turn on the broiler for a few minute to get the top nice and golden brown.


Once the casserole is finished baking remove it from the oven to rest for 10-20 minutes.

And there you have it!  A simple, delicious, and affordable meal of White Chicken Enchilada Casserole!  I served mine with a nice crisp salad to balance the richness of this casserole.  OH!  And did I mention this makes a FANTASTIC freezer meal!?!  Yes!  Before you get to the baking step just wrap it up and freeze it.  When you are ready to bake, defrost the night before and bake.  It is amazing and I know you and your family are going to love it so get in the kitchen and make it TONIGHT!

  1. Four cups of broth is too much. The sauce would not get thick! It was a delicious soup though!
