Pesto Chicken Soup Recipe

Like anyone else, I get stuck in a food rut. Even as a food blogger I find myself making the same things over and over.  That's why when my friend April over at The Tipsy Housewife issued a #LadiesOnlyChallenge called #BeansGreensProtiens I jumped on the opportunity.  The premise of the challenge is this, we have three mandatory ingredients and the recipe can have NO MORE than 10 ingredients.  I forged through my fridge and pantry and came up with this DELICIOUS Pesto Chicken Soup!


Simple, clean, ingredients this Pesto Chicken Soup is PACKED full of flavor and I know you're going to love it so....

Let's Get Started!



Pesto Chicken Soup Recipe:
*Prep Time: 10 min *Cook Time: 30 min *Difficulty: Easy  *Servings: 6-8

Ingredients:


  • 2 Boneless, Skinless Chicken Breasts
  • 4 c Chicken Broth
  • 2 c Water
  • 15 oz Can Garbanzo Beans, drained and rinsed
  • 6 oz Jar of Pesto
  • 1 Onion, diced
  • 2  Carrots, diced
  • 2 Stalks of Celery, diced
  • 4-6 Cloves of Garlic, minced 
  • 2 c Chopped Kale
  • Salt and Pepper to taste


To begin place a heavy bottomed pot over medium/high heat and add a little extra virgin olive oil.
Allow the pot to get hot.


While the pot is getting hot, prepare the vegetables.

 Sauté the vegetables 2-3 minutes until soft and translucent.


Add the garlic to the pot and cook just long enough for you to smell the garlic coming up from the pan.


Add the chicken broth and water to the pan.


Bring the water to a boil and add the chicken to the pot.


Cook 20 minutes until the chicken is fully cooked.


When the chicken is fully cooked remove it from pot and shred.


Add the garbanzo beans to the pot.


Then add the pesto.
This was a risk on my part, but I was BLOW AWAY at the amount of flavor it added!


Return the chicken to the pot.


Add the kale and cook for 10 more minutes.


Your Pesto Chicken Soup is ready to eat!!!

Pesto Chicken Soup Recipe:

PRINTABLE RECIPE 

Ingredients:
  • 2 Boneless, Skinless Chicken Breasts
  • 4 c Chicken Broth
  • 2 c Water

Directions:
  1. Place a pot over medium/high heat and add a little oil.  
  2. Add the onion, carrots, celery, and garlic to the pot.  Cook until soft and translucent. 
  3. Add the chicken broth and water.  Bring to a boil.
  4. Add the chicken and cook for 20 minutes until the chicken is fully cooked. 
  5. Remove the fully cooked chicken from the pot and shred.  
  6. Add the beans and pesto to the pot. 
  7. Return the chicken to the pot.
  8. Add the kale to the pot. 
  9. Cook for 10 minutes. 
  10. Serve and Enjoy!
