Easy Beef Chow Fun Recipe

When I tell people that I'm trying to eat healthy I usually get one of two responses.  One, "Oh I would love to do that, but it is just too expensive."  And two, "Man, that would be nice, but I just don't have time."  Well, I'm here to tell you tell you that healthy eating can be both inexpensive and quick.  Take my Easy Beef Chow Fun for example.

I'm not claiming that this is traditional, more like my West Virginia take on it, but packed full of veggies and protein, this delightful Asian meal is full of flavor and ready in no time!  I can't wait to share it with you so...

Let's Get Started!

Easy Beef Chow Fun Recipe:
*Prep Time:  5 min  *Cook Time:  20 min  *Difficulty:  Easy  *Servings: 4

Ingredients:

The ingredients needed to make the easy beef chow fun.

  1. 1 lb Ground Meat
  2. 1 Bag of Frozen Stir Fry Vegetables 
  3. 1/2 Box Brown Rice Noodles
  4. 1/2 c Cooking Sherry
  5. 1/4 c Hoisin Sauce
  6. 1 Tbsp Low Sodium Soy Sauce
  7. 2 tsp Cornstarch
  8. 2 Cloves of Garlic, minced
  9. 1 inch section of Fresh Ginger, minced
  10. Salt and Pepper, to taste

To begin you will need to place a deep skillet over high heat and allow it to get HOT.

Ground beef in the pan on the stove.

Add the ground meat and let it fully cook.  This should take about 10 minutes.

I used ground beef in this dish, but I have made it with ground chicken and turkey as well.  Of course you can always keep it strictly vegetarian as well.

Once the meat is fully cooked add the bag of frozen stir fry vegetables.

Place a lid on the pan and let cook for 10 minutes, stirring occasionally.

While the vegetables are cooking, you can make the rice noodles according to the directions on the box.

After 10 minutes add them to the pan and toss everything together.

Of course, if you want to keep this paleo you can substitute the rice noodles for cauliflower rice.

Now combine the cooking sherry, hoisin sauce, soy sauce, ginger, garlic, and cornstarch together in a small mixing bowl and whisk.

Pour over the beef chow fun, lower the heat and allow the sauce to thicken.

Toss so that everything is coated in the sauce and you are ready to eat!
