Chipotle Chicken Sausage Skillet with Cauliflower Rice

It's Thursday.  It's raining.  I've been running around like a chicken with my head cut off (what a horrible expression).  I DO NOT WANT TO COOK.  In fact, I want a hot dog from Sonic. I'm just keeping things real with you here. However, I'm committed to making better choices for myself.  Therefore, I went to the fridge to see what I could easily throw together.  That's when it happened.  Clean eating perfection.  Chipotle Chicken Sausage Skillet with Cauliflower Rice.  


This was absolutely delicious and it was ready and on my table in 20 minutes.  Oh, and did I mention its a ONE PAN MEAL!?!  I know you are going to love it so...

Let's Get Started!

Chipotle Chicken Sausage Skillet with Cauliflower Rice:
*Prep Time: 10 min  *Cook Time: 20 min  *Difficulty: Easy  *Servings: 4

Ingredients:


  • 1 package of Chipotle Chicken Sausage, sliced
  • 1 Red Bell Pepper, julienned
  • 1 Green Bell Pepper, julienned
  • 1 Onion, diced
  • 4 Cloves of Garlic, minced
  • 4 c Riced Cauliflower
  • 2 tsp Kosher Salt
  • 1 tsp Dried Oregano
  • 1/2 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/4 c Water
  • Feta Cheese, Avocado, and Cilantro for toppings


Place a skillet, with a little olive oil, over medium/high heat and allow it to get hot.
I prefer to use a cast iron skillet.  I'll link my personal favorite one HERE.


Once the pan is hot add the chipotle chicken sausage.
Allow it to brown, 3-5 minutes.


After the chipotle chicken sausage has browned, remove it from the skillet and add the onion.
Allow the onions to cook until they are soft and translucent, 2-3 minutes.


Now add the bell peppers.
Cook for 2-3 minutes to allow them time to get tender.


After that, add the garlic.
Cook just long enough for you to smell it coming from the pan.


Now add the cauliflower rice.
I made this in my food processor from a head of cauliflower (I will link the how-to HERE), but you can get it remade in most super markets in the freezer section.

Of course you could add regular rice, but I really like this alternative.  It is nutritious, filling, and I promise you that you can hardly tell the difference.


To the cauliflower rice you will add the spices, stir everything together, and ...


Add the water.

Stir everything together and allow a sauce to form.


Return the chipotle chicken sausage to the pan, stir everything together, and you are ready to go.


I like to sprinkle a little feta cheese on top, but again, you can use whatever cheese you prefer.  Also, I like to sprinkle a little chopped cilantro for a touch of freshness.


I have to admit that this was WAY better than a hot dog from Sonic.  Warm, spicy, it was the perfect meal on this cold, rainy night.  And because it only take one pan to make, clean up was a breeze.  Add a little avocado and a salad, yes, this is perfection.  So the next time you don't feel like cooking, keep things simple and give the mouthwatering Chipotle Chicken Sausage Skillet with Cauliflower Rice a try.
