Crock pot Chicken and Kale Soup Recipe

So the other day time got away from me, and I realized that I hadn't really thought dinner through.  I was on a 10 day detox, so my options were limited.  That's when I went to the fridge to see what I had on hand.  Some veg, some greens, veggie broth, and frozen chicken.  Oh yeah, I am totally making Crockpot Chicken and Kale Soup.

This Crockpot Chicken and Kale Soup literally comes together in minutes, and the crock pot does all the work.  I can't wait to share it with you, so...

Crock pot Chicken and Kale Soup:

*Prep Time: 5 *Cook Time: 4-8 hours *Difficulty:  Easy  *Servings: 6-8

Ingredients:

The ingredients needed to make the Crockpot Chicken and Kale Soup.



  • 3 Frozen Chicken Breasts
  • 2 large handfuls of Chopped and stemed Kale
  • 3 Carrtos, peeled and sliced
  • 1 15 oz. can of Cannellini Beans, drained and rinsed
  • 1 Red Onion, diced
  • 3 cloves of Garlic, minced
  • 8 c of Vegetable Broth
  • 1 tsp of Thyme
  • Salt and Pepper to taste

To begin you simply need to place the frozen chicken breasts into the bottom of your crock pot.

Kale in the crockpot.

Next add the Kale.

Of course you can remove the stem from the leaves and chop it, BUT I have really been enjoying the chopped organic kale in the bag from Walmart.  The price point is not much more than the bundles, and it's such a time saver.



Now add the carrots to the crock pot,

Garlic in the crockpot.

Along with the garlic.

White beans in the crock pot.

Salt in the crockoit.

Season it with the salt,

Pepper in the crockpot

pepper,


And thyme.

Vegetable stock in the crockpot.

Once everything is in the crock pot you can pour in the vegetable broth.

Everything being stirred together.

Give everything a little stir, place the lid on the crock pot, and turn it to HIGH for 4 hours, or LOW for 8 hours.

And in case you are wondering what crock pot I used, I use the Crock Pot Cook N' Carry 6-Quart Oval Manual Portable Slow Cooker.  It's not that pricey and it travels really well.  I included an Amazon link if you are interested in ordering one for yourself!

Right before you eat your Crock Pot Chicken and Kale Soup, you will need to remove the chicken from the crock pot and shred it.

Once the chicken is shredded you will need to return it to the crock pot.

And there you have it!  All done!

I was truly blown away by how flavorful this soup was, not to mention is was so filling.  Great for anyone eating paleo, clean, low carb, or just want an easy weeknight meal!  I shaved a little fresh parmesan cheese over the top and it was MIND BLOWING!  I know you're going to LOVE this recipe so get in the kitchen and give it a try tonight.  OH!  And if you enjoyed this recipe you may also like my Italian Wedding Soup or my Vegetarian Pho.

Ingredients:
  • 3 Frozen Chicken Breasts
  • 2 large handfuls of Chopped and stemed Kale
  • 3 Carrtos, peeled and sliced
  • 1 15 oz. can of Cannellini Beans, drained and rinsed
  • 1 Red Onion, diced
  • 3 cloves of Garlic, minced
  • 8 c of Vegetable Broth
  • 1 tsp of Thyme
  • Salt and Pepper to taste
Directions:
  1. Place the frozen chicken breasts into the bottom of the crock pot. 
  2. On top of the chicken breasts place the kale, carrots, onions, garlic, and beans.
  3. Next, pour in the vegetable broth and add the salt, pepper, and thyme.
  4. Place the lid on the crockpot and set the temperature to HIGH for 4 hours or LOW for 8 hours.  
  5. Just before you are ready to eat, remove the chicken from the crock pot and shred it.  
  6. Once shredded return to the crockpot, stir, and taste for seasoning.  
  7. Serve and Enjoy!
*I like to top with a little shredded parmesan.
