Avocado Toast with Egg and Sriracha Recipe

I have a new food obsession.  No, it's not some fancy gourmet thing that I discovered on my travels.  My new food obsession is rather simple actually...

Its Avocado Toast with Egg and Sriracha.

Now some of you may be saying WHAT?  How does this even qualify for a recipe?  Well, the answer is simple.  I posted a picture of it on social media and received more inquiries on how I make it than any of my recipes to date so I thought I would write this up and share you my new favorite go to breakfast.  I know you are going to get hooked as well, so...

Let's Get Started!
Avocado Toast with Egg and Sriracha:
*Prep Time: 2 min *Cook Time 5 min *Difficulty: Easy Servings: 1

Ingredients:

The ingredients needed to make the avocado toast with egg and sriracha.

  •  1 Slice of Bread
  • 1/2 a ripe Avocado, mashed
  • 1 Egg, fried
  • 1 tsp. Extra Virgin Olive Oil
  • Sriracha, to taste
  • Salt and Pepper, to taste

A small non-stick frying pan with a little extra virgin olive oil in it, over the flame on the stove.

To begin you will need to place a small frying pan over medium/high heat and add the oil.
Allow the pan and the oil to get hot.

An egg frying on the frying pan.

Once the pan and the oil are hot, kind of turn the pan around so that it is coated with the oil and add the egg.

Season the egg with a little salt and pepper, and let cook for 4-5 minutes.

The avocado mashed in a bowl, and seasoned with salt and pepper.

While the egg is cooking, cut the avocado in half and squeeze the half WITHOUT the pit into a small bowl.  Season with salt and pepper and mash with a fork.

***Here is a tip.  Don't worry about wasting the other half of the avocado.  Simply leave the pit in and cover tightly with cling wrap.  It will be good to go, on your counter, until tomorrow. ***

The honey oat bread in the toaster, toasting.

Place your bread into the toaster and toast until it is golden brown.
You can use any bread you like, but I really like this organic honey oat bread from Aldi.

The mashed avocado smeared over the honey oat bread toast.

Once the toast has finished, smear the mashed avocado all over it.

A fried egg on top of the toast with avocado on it.

Next, place the egg over it.

Drizzle a little sriracha sauce over it and you are ready to eat!

This Avocado Toast with Egg and Sriracha is so rich and flavorful, it is like silk in your mouth.  You will be surprised at how filling it is, and it is super healthy for you as well!  The best part, it's ready in UNDER 10 minutes!  So the next time you think you don't have time for a healthy breakfast, get in the kitchen and give this delicious Avocado Toast with Egg and Sriracha a try!
