Triple Chocolate Macadamia Nut Cookie Recipe

It's been a minute since I've posted something sweet on this site, so I thought we were due.  I don't know if I've talked about this before or not, but my Mother-in-Love has the BIGGEST sweet tooth I have ever seen.  She could LIVE on cookies if I would let her.  This love for all things sweet has been passed down to Studhubs.  Needless to say no dessert is safe in this house, especially these Triple Chocolate Macadamia Nut Cookies

 Yes, I said TRIPLE Chocolate Macadamia Nut Cookies!  They are absolutely out of this world, and you will not believe how easy they are to make.  So....

Let's Get Started!

Triple Chocolate Macadamia Nut Cookies:
*Prep Time:  10 min.  *Cook Time: 10-12 min. *Difficulty:  Easy *Servings:  24 Cookies

Ingredients:


The ingredients needed for the triple chocolate macadamia nut cookies.

  • 1 1/4 c. All Purpose Flour
  • 1/3 c Unsweetened Cocoa Powder
  • 1 tbsp. Instant Coffee (optional)
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1/2 c. Unsalted Butter, softened
  • 2/3 c. Brown Sugar
  • 1/4 c. Sugar
  • 1 Large Egg
  • 1 tsp. Vanilla
  • 3/4 c. Semi-Sweet Chocolate Chips
  • 3/4 c. White Chocolate Chips
  • 1 c. Macadamia Nuts, chopped
To begin you will need to preheat the oven to 350 degrees.  


The dry ingredients in a sieve, being sifted into a mixing bowl.

Next combine the flour, cocoa, instant coffee, baking soda, and salt into a mixing bowl and whisk together.
I used a sieve here, but if you don't have one a whisk will work just fine.

The butter, sugar, and brown sugar, in the mixer to be creamed.

 Now, into a separate bowl, combine the softened butter, brown sugar, and sugar.
Mix them together with a hand mixer or a stand mixer (using the paddle attachment).

When everything is creamed together it will look like this.

Add the egg and vanilla to the mixing bowl.

Mix it all together.

Now, slowly, add the dry ingredients to the mixing bowl, while mixing on low.
I like to use a spoon and do it a scoop at a time.
This is help make sure that your dry and wet ingredients will me completely combined.

When it is all mixed together it will be a thick, dense dough like this.

Once the dough is mixed together you can add the chocolate chips,

If you have a stand mixer you can use the paddle attachment to gently combine this all together, but if not I recommend doing it by hand or with a rubber spatula.

Now place tablespoon sized scoops on a baking sheet and bake for 10-12 minutes.

Once you remove them from the oven let them cool on the baking sheet for 10 minutes.

After 10 minutes you can transfer them to a cooling rack until you are ready to eat!

Directions:
  1. Preheat the oven to 350 degrees. 
  2. In a mixing bowl combine the flour, cocoa, instant coffee, and salt.  Whisk it together. 
  3. In a stand mixer or separate mixing bowl combine the butter, brown sugar, and sugar.  Beat them together until creamed. 
  4. Add the egg and vanilla to the butter mixture and mix that in as well. 
  5. Slowly, one scoop at a time, add the flour mixture to the butter mixture and mix together slowly. 
  6. Once all the ingredients are mixed together, you can add the chocolate chips, white chocolate, and chopped macadamia nuts to the cookie dough.  
  7. Using the paddle attachment, gently mix them into the dough.  If you  don't have a stand mixer I would do it by hand or with a rubber spatula.  
  8. On a baking sheet, scoop tablespoon sized balls of dough.
  9. Place in the oven and bake for 10-12 minutes. 
  10. Let cool on baking sheet for 10 minutes and then transfer to a cooling rack.  
  11. Serve and Enjoy!
