Meatless Mondays: It Makes a Difference

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #MyWaytoVeg #CollectiveBias

Many of you know that nine months ago I made some drastic changes in my life and began on the journey to health.  I cleaned up my eating, started working out, and here I am 50 pounds lighter.  I have never felt better.  I'm not on a diet.  I'm just making better choices for my body, and one of the changes I have made is exercising Meatless Monday.  However, what started as a way to get more veggies into my diet, has turned into an opportunity to make a difference in the world at large.  You see as I began to do more research I discovered that by simply having one vegetable based meal a day you can...

  • Reduce water consumption by 58% per person.
  • Reduce the production of greenhouse gasses, which are a major contributor to global warming.
  • Reduce our increasing dependence on fossil fuels.
These things paired with the overall health benefits in your body, as well as the benefits to your wallet, why wouldn't you begin to exercise this simple practice?

Celebrate the Season: Christmas Bucket List and Free Printable

It's December first, and I can officially shout from the mountain tops that the CHRISTMAS SEASON IS OFFICIALLY HERE!  Christmas is without a doubt my favorite holiday.  While the gifts are definitely a nice bonus, the best part about this season for me is the music, the traditions, the baking, just the overall spirit of the season.  So this year, being the seasonal junkie that I am, I came up with twelve practical ways you can celebrate the season with your family.

I'm calling it a Christmas Bucket List, but honestly these are just some of the ways my family and I make merry each year.  These are so organic, that I have already marked a few things off the list without trying.  The list goes as follows...

5 Holiday Travel Tips for Caregivers

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #MyCareGivingStory #cbias  #CollectiveBias

Recently my husband and I entered a new season in our lives.  We became caregivers to my now 92 year old mother-in-law, Dora.  Dora has Alzheimer's and dementia, therefore she is unable to live by herself.  I know that I should be saying what a difficult decision it was to take this on, but to be honest, it was a no brainer for us.  You see Dora spent her entire life loving and caring for my husband, and now it was our turn to give back.  One thing I have learned in this season of life is that traveling around for the holidays can be tricky.

Travel-Tips-Title.jpg
Dora thrives on routine and familiarity.  When things are off it really throws her for a loop.  I imagine it is that way for most people who travel with seniors who have special needs, so with the holidays approaching I thought I would share my 5 tips for making travel and overnight stays a little easier on them and you.

Chipotle Chicken Quinoa Bowl Recipe

One of the things I have come to love about healthy cooking is the fact that it is so simplistic.  Growing up in Appalachia, cooking always seemed daunting and fussy.  Lots of frying, and gravy, and cheese, and...well...you get it.  However, since I have cleaned up my eating habits, some of my favorite meals are so simple that I would never think they would be as delicious as they are.  Take my Chipotle Chicken Quinoa Bowls for example.

Big, bold, flavor and fresh ingredients make this 30 minute meals one of my new favs!  I know you are going to love this one so...

Sausage and Herbed Quinoa Stuffed Acorn Squash Recipe

It seems like everyone I know is jumping on the clean eating band wagon.  The one thing that keeps coming up in our conversations is how expensive it is.  You can walk into the supermarket and fill a cart full of crap for $50, but that same amount will barely cover the bottom with fresh fruits and vegetables.  It's totally not right, but one of the tricks I've learned to help combat the cost of healthy eating is to buy items that are in season.  No matter if you are in the height of summer or the depths of winter, something will be growing.  This means that those items are abundant, which in turn means they are less expensive.  Take my Sausage and Herbed Quinoa Stuffed Acorn Squash for example.

I literally paid .69 for a single squash at my local Aldi.  SIXTY-NINE CENTS! That will feed two people! And when you see this recipe you will see that though it is inexpensive, it tastes like a million bucks!  I can't wait to share it with you so....

Thai Sesame Zoodle Bowl with Steak Recipe

I LOVE PASTA.  I do.  I'm not ashamed. If food could be a spirit animal, pasta would be mine.  I love it with sauce, I love it with cheese, I love it with nothing but garlic and oil.  I...LOVE...PASTA.   But let's be real, pasta is not my friend.  In fact, pasta hates me.  Don't get me wrong, it's fine when it's whole wheat and in small portions.  However, in this new season of life, I try and stay away from it.  I used to be pretty bummed about that until a friend told me about something magical.  ZOODLES!

I know what you may be thinking.  "Mandee, are you turning into one of those freakish people who are trying to convince me that spaghetti squash is just like pasta?"  No, not at all.  Zoodles are not pasta.  BUT, if you're jonesing for pasta with meat sauce or your favorite Asian noodle dish, zoodles are a WONDERFUL alternative and my Thai Sesame Zoodles with Steak are the perfect example of that!

Perfect Chicken Cordon Bleu

Last Monday was National Chicken Cordon Bleu Day, and though I wanted to have my recipe posted for you, life didn't work out for me.   However, I did make my Chicken Cordon Bleu that night, and I can't wait to share it with you now!

I feel like when you hear "Chicken Cordon Bleu" there is a fear that it's going to be a difficult and fussy dish.  That just isn't the case.  In fact, it couldn't be more simple.  You're about to blow everyone away with this dish so...

Tomee the Cat and my Litter Box Hack

Growing up, I think it's safe to say that my brother was the one child in my family who was a little more..."enthusiastic" than the rest of us.  And let's be honest, every family has that one child that leaves a special imprint on your heart.  Our family is no different.

Enter Tomee the Cat.  She is my second fur baby, my first girl, and she is a character!  From the moment we met, I knew she was not going to be your typical cat.  My husband and I had gone to the Humane Society to "just look."  I was eyeing this beautiful Persian when all of the sudden something grabbed my hair from above.  Pretty much the rest is history!  She came home with us, and has been a ball of personality ever since!

My Tomee girl is very precious to me, and because of that I want her to have the best of everything, including her litter.  That's why I use Fresh Step Total Control with the Power of Febreze!
