Sweet Chili Ranch Chicken Casserole

Life is busy, and we all need that go-to recipe for nights when time is not on our side.  I'm talking the kind of recipe where you literally pop open a few cans, mix some things together, and put it in the oven.  The good news is that with a few simple ingredients and some of Hidden Valley Ranch's Sweet Chili Dressing that "throw-it-together" meal can be transformed into something that your family will ask for time and time again.  Take my Sweet Chili Ranch Chicken Casserole for example.  It literally takes minutes to put together, uses all pre-cooked or canned goods, and is finished in 30 min!  The secret is in the ranch.

I found my Hidden Valley Ranch Sweet Chili Dressing in the salad dressing aisle of my local Kroger.  It was clearly displayed toward the top of the shelf, and I had no problems finding it.

This recipe is so quick and flavorful I know you are going to love it!  I can't wait to share it with you so...

Sweet Potato Fries

The official start of summer is upon us! With the availability of fresh produce being more abundant, I am finding myself wanting to make better choices.  However, making better a choice is not the same thing as depriving yourself of the things you love.  Take my delicious, oven-baked, Sweet Potato Fries for example.  All the great flavor and texture of their white, starchy cousin, but so much better for you.  I can't wait to share with you how I did it, so...

Natural Bathroom Cleaner

I was blown away by your response to my Natural All Purpose Cleaner recipe! Because of that, I have decided to share another one with you.

As I've mentioned before, in 2015 I have been working to become as chemical-free in my home as possible.  It's because of that I have been making many of my own household cleaners.  One of the harshest store bought cleaners in your home is your bathroom cleaner.  Mine was so toxic that it even said to make sure the room was well ventilated while using it.  So when I began the journey of making my own cleaners, that was one of the first ones I researched.  I have to say that when I stumbled across this recipe in an old book of my mother-in-law's I was a little skeptical.  I mean Vodka?  But when I began researching the cleaning properties I thought "Well, I'll give it a try."  You see, vodka's high alcohol content is what makes it great for killing germs, mold, and mildew, and it does not have a harsh smell to it.  However, if you are not comfortable with using vodka feel free to substitute with rubbing alcohol.  Though it's not as strong as vodka, it produces a similar result.

I am so excited to share this cleaner with you, so...

Spicy Black Bean Burgers

Spicy Black Bean Burger

I have been a fan of Meatless Monday for a while, and I try to practice it in my home as much as possible.  The challenge is finding things that my carnivorous king of a husband will like as well.  It has to be filling, flavorful, and not to weird.  That is why I LOVE these Spicy Black Bean Burgers. They are just what it takes to keep Studhubs happy, and I know you are going to love the too!  I can't wait to share them with you, so...

Cilantro Lime Rice

Sometimes at the end of the month I have more meals left than budget.  That's when I try to get resourceful and stretch my dime the best I can.  It's from that place that my recipe for Cilantro Lime Rice was born.  I was having friends over for a dinner party and didn't have a lot of money to do it with.  After I bought the supplies for the entree the bulk of my budget was gone, so I went to my trusty pantry to see what I could come up with.  I had some cilantro and lime left from the Tequila Lime Chicken and Pico de Gallo, then I saw the rice & I thought cilantro lime rice, perfect!  It was simple, flavorful, and inexpensive.  The perfect compliment to my meal.  I know you're going to love it, so...

Tequila Lime Chicken

I love chicken.

I would go so far as to call it the tofu of meats!  I say that because, on it's own, it doesn't have a lot of flavor, but when you season it just right, OMG! One of my favorite ways to prepare chicken is with my tequila lime marinade.  It is PACKED full of flavor, super simple, and I know you are going to love it!  I can't wait to share it with you so

Baked Spaghetti

So today's recipe kind of has a funny back story.

My friends are always sending my funny videos to watch.  The other day my friend Rose sent me a cooking tutorial video on how to make baked spaghetti.  I don't know how to describe it other than to say it kind of made you think of "Cooking From Prison with (Insert your favorite prison name here.)" It was disturbing yet slightly comical, but it did get me to thinking.  I have never had baked spaghetti.  I know, crazy right!?!  I knew immediately I had to change that so I decided to make some for dinner.  Before you ask NO, this is NOT the recipe from that video.  *lol*  I kinda of concocted my own recipe, but it was seriously delicious and simple enough for a weeknight meal!  I can't wait to share it with you so...

Perfect Simple Guacamole

Simple Perfect Guacamole

I will never forget the first time I tried guacamole.  I was visiting my sister in New Jersey, it was our last night there, and we were going to visit some friends that we had met at her wedding.  They are from Costa Rica, and the mother was going to make us a Latin feast!  I kid you not, they literally met us at the door with chips and "guac".  Before this, the only guacamole I had seen was green, mushy, and unappealing looking.  However, her guacamole was chunky, colorful and vibrant.  Then I tasted it.  OH MY STARS!  It was absolutely delicious!  Of course I asked for her recipe and I can't wait to share it with you.
