Wet Burritos

My husband grew up in Grand Rapids Michigan, and for as long as we have been married (15 years next week!) he has talked about a gal named Maria, and the Wet Burritos she made at the Mexican Restaurant he and his family frequently visited.  I assumed that a wet burrito was a burrito with salsa on top, but he assured me I was wrong.

And then it happened.  While going through his parents house, and packing his mother's belongings up to move in with us, I came across an old cookbook and found this inside!

It was Maria's Wet Burrito Recipe!  I couldn't believe what I was seeing and I was so excited to surprise Studhubs with his favorite childhood delight!  The only problem was that the handwriting was a little difficult to decipher, so this led to an extensive research endeavor, but I feel confident in saying that this West Virginia girl has done Grand Rapids proud with my interpretation of the Wet Burrito. And I have to admit, this bad boy was delicious. I can't wait to share this recipe with you!

Even though I am not Mexican, I love celebrating Cinco de Mayo.  Basically it's because it gives me the freedom to eat as much Mexican food as I want!  But let's be honest, does one REALLY need a reason to eat Mexican?  No, I think not.  *lol*

ANYWAY, the one downside to Cinco de Mayo being in May is that the tomatoes are not yet ripe enough to make really good fresh salsa.  That's why I have come up with the great "Winter" Salsa!  It is so flavorful and filling, I dare say it might be a meal all on it's own!  I can't wait to share it with you so...

I think it is safe to say that, when we think of Mexican food at home, tacos are one of the first things that come to mind.  In fact, I'm pretty sure there is a "Taco Tuesday" movement sweeping across the country as well.  Tacos really are the PERFECT weeknight meal because they require minimal ingredients and can be ready in minutes. But what happens when you want tacos and don't have the seasoning packet?  Are you going to run to the market and waste money in gas and product?  NO WAY!  In fact, you are going to make your OWN seasoning and it is going to taste EVEN BETTER than the sodium-laden stuff you get from the grocery store!  This is my Homemade Taco Seasoning go-to and I KNOW you are going to love it!

Dear Kitchen Wife, 

How do I know when my pasta is cooked just right?

Dear Jade,

Everyone likes their pasta cooked differently.  Some like it kinda mushy, others, like myself, like it al dente, which means it has a little "bite" to it.  I know that you may have heard to throw it on the cabinet, and if it sticks, its ready.  But best practice for al dente is to cook it according to instructions on the package.  If you are going to add it to sauce, cook it about a minute less than the package says.  I know that seems like a much to simple answer, but the truth is the manufacturers have tested and tested their product to give you the best quality, so I tend to go with what they say.  If you like it a little softer you can always cook a minute or two past what it calls for.  It's that simple. No throwing required!  I hope that helps you out.  Thanks so much for writing in!

I have tried SEVERAL different "concoctions" for a good all-purpose cleaner on this journey.  Some left films over my counters.  For some, the vinegar smell was so strong I found that I just couldn't handle it, and ultimately, I felt most didn't do much for cutting through grease.  That was until now.  After much trial and error I have found a homemade, all-purpose cleaner, that smells great, doesn't leave a film, and cuts grease!  I can't wait to share it with you so

I LOVE YOU!  I really, really do!  I say that I cook everyday for my husband, but you are the ones who push me to be more and more creative in the kitchen!  One of the ways you do that is through our interaction on Facebook (That is my weapon of choice).  Occasionally I will have a random ingredient burning a hole in my fridge that I need to use up and I will go to you for suggestions.  I am always amazed by your creativity in the kitchen, and I try and take your suggestions and come up with something that embodies them all!  That is where today's recipe comes from.

Recently I had some zucchini that NEEDED to be used up.  I didn't just want to saute it like I normally would.  No, I wanted to get a little more creative with things than that.  So I asked for your suggestions and that is when my Chicken Parmesan Stuffed Zucchini was born!  It has all of those great rich flavors of chicken parmesan you love, but is on the lighter side.  It is absolutely delicious, and I KNOW you are going to love it!  I can't wait to share it with you so LET'S GET STARTED!!!

I love steak!

I said it.  I'm not ashamed!  Nothing beats the flavor of great beef.  The thing is, steak can get pricey. Asparagus is probably one of the favorite vegetables in my family.  I'm pretty sure I could serve it every night and no one would complain.  My personal favorite way to eat it is roasted.  A little olive oil, some lemon pepper seasoning, salt, PERFECTION.  However, just when I thought roasted asparagus couldn't get any better, I discover that people are wrapping it is BACON!!  WHAAAA!?!  I mean honestly, when has bacon NOT made something better?  So I gave it a try the other night and oh my stars, it was delicious!

I'm pretty sure at least half of the homes across the nation were serving some sort of ham this past Sunday.  Why?  Because it was Easter Sunday, and well, that's what you serve on Easter, right?

And how difficult is ham?  I mean honestly, you put in a 350 degree oven for 15 minutes per pound, and you're done.  Well, yes, that's true.  You COULD put the same ol', everyday, ham on the table tonight, OR you could put something special, I dare say sexy, on the table.  That's what my Honey Glazed Ham is.  It's taking your simple, everyday ham, putting a little black dress on that darlin', and saying "Look out stomach!  Here I come!"

I know I have said this time and time again, but my pantry is my greatest source of inspiration.

The other night I was trying to figure out what to make for dinner.  I hadn't really had a chance to make a menu and go to the store, so went to the pantry and fridge to see what I had on hand.  I saw the bag of ravioli in the freezer and thought "Hmm, ravioli sounds good", but I didn't want to simply boil it and pour some sauce over it.  I mean, that would be too easy, right?  *lol* So I continued looking and that's when I saw the jar of pesto.  Then it hit me!  Canned tomatoes, pesto, cheese, CAPRESE ALFREDO!!  I know I'm probably not the first person to come up with this concept, but can I just say that this sauce is honestly one of the most delicious concoctions to come out of my kitchen!  I know you are going to love it, and I can't wait to share it with you so...

Guinness Braised Short Ribs over Polenta


Last week was a crazy week in the Pogue house.

It seemed like every night we had something going on, and the weekend was shaping up to be pretty busy as well.  That is when I decided I wanted dinner on Friday night to be something extra special for Studhubs.  I had some time on my hands that day, and that meant I could make something slow cooking, rich, and hearty.  The first thing that came to mind were these DECADENT Guinness Braised Short Ribs over Polenta.  Because let's face it, when you think of something special for the man in your life does it get more manlier than beef and beer?  I think not.  So that is what I did and can I just say that they were AMAZING!  I know you are going to love them, and I can't wait to share with you how I made it!
