Roasted Truffle and Parmesan Fingerling Potatoes

Yesterday I mentioned that chicken is America's go-to protein, and if chicken is our go-to protein, then potatoes are our go-to side dish.

I love potatoes.  I really do.  I like them mashed, boiled, fried, baked, roasted, you name it, I love it.  But sometimes potatoes can get a little monotonous.  That is why, when I can, I like to do little things to dress them up.  For example, while I was in Virginia Beach this past January I ate at this FANTASTIC place called Eurasia Cafe and they served these absolutely decadent Truffle Parmesan Rries with the most succulent NY Strip I have ever had.  I was instantly in love, and I knew I needed to recreate them, in some way when I got home!  That is when I went into Trader Joe's and saw these adorable "Teeny Tiny Fingerling Potatoes".  In that moment I knew they would be perfect for this recipe.

These potatoes are DIVINE and I can't wait to share them with you!  Let's get started!

Roasted Truffle & Parmesan Potatoes:
*Prep Time:  5 min.  *Cook Time: 45-60 min.  *Difficulty:  Easy  *Servings: 4

Ingredients:


  • 2 lb. Bag of Fingerling Potatoes
  • 2-3 tbsp. Truffle Oil
  • 2-3 tbsp. Extra Virgin Olive Oil
  • 1 tsp Salt
  • 1/2 tsp. Pepper
  • Freshly Grated Parmesan Cheese
To begin you will need to preheat the oven to 375 degrees. 



While the oven is preheating, take this time to give the potatoes a good rinse.


Next line a baking sheet with foil and spray with a little cooking spray.
Place the potatoes on the baking sheet in a single layer.


Drizzle the olive oil over the potatoes.


Season with the salt


Pepper.


Toss the potatoes in the oil, salt, and pepper.


Next place in the preheated oven.


You will roast them for 45-60 minutes until the potatoes are fork tender.


Now these look amazing and you could certainly eat these just as they are, but trust me, you will want to wait.


Place them into a mixing bowl because it is time to dress things up.


To take these roasted fingerling potatoes from ordinary to EXTRAORDINARY is a little truffle oil.

Now If I were to buy real truffle, (an underground mushroom of sorts) let's just say that I would be breaking into some of our retirement savings to do so.  However, an inexpensive way to get that great truffle taste is with truffle oil.  You can get it at most specialty food stores for between $15 and $20, but I lucked into some from Aldi for $2.99.

Pour truffle oil over the hot potatoes and grate the Parmesan cheese over them.
Toss, serve, and Enjoy!

The flavor of the truffle oil on the potatoes is out of this world!  It is deep and earthy, only to be complimented by the saltiness of the cheese.  And the smell...Oh my stars, so delish!  This is the sort of side you would pay top dollar for at a posh restaurant, but here you are, serving it on your table, on a week night!  You are a kitchen rock star!  So tonight, surprise them all, break out the table cloths, good napkins, and nice china  Light a few candles and make something extra special with these Roasted Truffle & Parmesan Fingerling Potatoes!
