Greek Salad


I will confess, when it comes to salad I usually just buy the bag and call it done.  I know, I know, but look, we can't ALL be Julia Child.  *lol*  Anyway, the other night we were having some very special guests over and I was making a luscious roasted beef tenderloin with mashed cauliflower.  I needed something to cut through the richness of those two items so I opted for a salad.  However, since we were having guests, I didn't want to simply serve them salad out of the bag.  So, I went to the pantry and fridge to see what I could come up with.  Hmmm, kalamata olives, onion, cherry tomatoes, feta, cucumber....  Oh I know!  Greek Salad!  So here it is MY take on a Greek Salad complete with a little homemade dressing I whipped up!

Let's get started!


Greek Salad:
*Prep Time: 15 min.  *Cook Time:--  *Difficulty:  Easy  *Servings:4-6

Ingredients:


  •  1 container or bag of spring greens.
  • 1 onion, sliced
  • 1 seedless cucumber, halved and sliced. 
  • 1 c. cherry tomatoes, halved
  • 1/2 c. kalamata olives, halved
  • Feta cheese
  • Salt and pepper


To begin, give your  spring greens a rough chops, rinse, and drain.
Even if you are buying the pre-washed or organic greens, go ahead and wash them again.  You can never be too careful.

 Next, slice the cucumber in half, and then slice it into little half moons.


Then, do the same with your onion.
Personally I would have rather used a red onion in this salad, but white is all I had on hand.
Just make sure you are slicing it as thin as you can.


Now, drain the kalamada olives and slice them in half.


Place everything in a bowl, add the feta cheese, and give it a light toss.


For the dressing I just threw together

  • 1/2 c. Olive oil
  • 1/2 c. Red Wine Vinegar
  • 1 tsp. Garlic Powder
  • 1 tsp. Dried Oregano
  • 1 tsp. Dried Basil
  • 1 tsp. Pepper
  • 1 tsp. Salt
  • 2 tsp. Dijon Mustard
Throw it all in a mason jar or mixing bowl and whisk or shake until combined!  
Drizzled a little over your salad and ENJOY!  If you would like to make a meal out of this salad feel free to add a little marinated grilled chicken to the mix and call it done!  A perfect light, quick, and easy weeknight meal!  I hope you enjoy this salad and as always...

PRINTABLE RECIPE

Ingredients:

  •  1 container or bag of spring greens.

  3. Add the tomatoes, onions, cucumber, olives, and feta cheese to the bowl and lightly toss.
  4. For the dressing, combine all of the ingredients in a bowl or mason jar and whisk or shake until well mixed.  
  5. Drizzle with dressing.
  6. Serve and enjoy!
