Easy Peasy Peach Crisp

These past few days of summer have been magical!  Sunny days, warms breezes, everything you want this season to be!  I find myself wanting to spend every minute outdoors!  Another thing that I am thoroughly enjoying about this time of year are all of the wonderful farm stands that we have in our community.  In just about every neighborhood you will see them selling all of their fresh produce.  Yesterday, on our way home from church, my husband decided to swing by one such stand and see what tickled our fancy.  I wish I would have had my camera because everything looked delicious, but something that REALLY stuck out to us were these AMAZING peaches they had.  They were so ripe and juicy that you could smell them clear on the far end of the stand!  I knew instantly what I wanted to make with them, PEACH CRISP, and I can't wait to share with you how I did it!

Let's get started!


Easy Peasy Peach Crisp:
*Prep Time: 20 min.  *Cook Time: 1 Hour  *Difficulty:  Easy  *Servings:  6-8
Ingredients: 
  • 7-10 medium sized peaches peeled, pitted, and sliced (you may also use canned or frozen)
  • 1 1/2 c. Brown sugar
  • 1 1/2 c. Flour plus 3 tbsp.
  • 1 c. Quick cooking oats
  • 1 c. Sugar
  • 1 tsp. Lemon juice
  • 1 tsp. Cinnamon
  • 1/2 tsp. Salt
  • 2 Sticks of COLD butter, diced.
Tools:
  • Pairing knife
  • 2 mixing bowls
  • 8x11.5 baking dish
  • Measuring cups
  • Measuring Spoons
  • Rubber Spatula
  • Pastry cutter
To begin you will need to preheat your oven to 350 degrees.


Then, if you have chosen to use fresh peaches, you will need to peel, pit, and slice them.
However, the good thing about this recipe is that you can use not only fresh peaches, but frozen or even canned....EASY PEASY!


Once you have prepped the peaches, you can place them in a bowl and add the lemon juice,


1 cup of brown sugar,


and 2-3 tbsp. of flour.


Gently fold the ingredients together and set aside for 5 minutes. 


If after 5 minutes you notice a lot of juice forming, go ahead and add 1-2 more tbsps. of flour and gently fold again.


Pour the peaches into a greased baking dish.


Be sure to take a moment and level them out.



The next step is to combine the rest of the flour, brown sugar, oats, sugar, cinnamon, and salt into a bowl and mix together.

Now, take your butter out of the refrigerator and cut it into small cubes.
It is vital that you keep the butter cold.


Add the butter to the dry ingredients and

Use the pastry cutter to cut the butter in.
If you do not have a pastry cutter, that is fine. 
You can also use your fingers.

You will know the crumble topping is ready with it resemble wet sand.

Now, sprinkle the crumble topping over your peaches and

Place in a 350 degree oven for 1 hour.


After one hour, remove the crisp from the oven and allow it to set for 10-15 minutes.


Mmmmmm.....Look at that. 
 Warm, gooey, crunchy, sweet goodness!  Summer at it's finest!  I don't know about you, but all I want to do is add a scoop of vanilla ice cream to this plate, head out to my porch with a nice glass of tea, and call it a day!

This crisp is so simple and perfect for a weeknight treat!  I know your family is going to love it!

  1. Preheat oven to 350 degrees.
  2. If using fresh peaches, peel, pit, and slice them.
  3. Add sliced peaches to the bowl and add 1 cup of brown sugar, 1 tsp. of lemon juice, and 3 tbsp. of flour.
  4. Gentle fold together.
  5. Allow the peaches to set for 5 minutes.  If you notice a lot of juice, add another tbsp. of flour.
  6. Pour peaches in to a greased 8x11.5 baking dish and set aside.
  7. In another bowl, add the flour, sugar, oats, cinnamon, 1/2 c. brown sugar, and salt.  Mix together.
  8. Then add the diced butter, and using the pastry cutter or your fingers, work it into he dry mixture.
  9. You will know it is ready when it resembles wet sand.
  10. sprinkle crumble over the top of the peaches.
  11. Place into a 350 degree oven and bake for 1 hour until topping is golden brown.
  12. After one hour, remove from oven and let set for 10-5 minutes.
  13. Serve and enjoy!
