Weeknight Burritos


I LOVE MEXICAN FOOD! 

That's it.
 I could stop this post right now, and most of you would know exactly what I'm talking about!  However, there is a small number of you out there that would say
 "Okay, you love Mexican food.  What's the big deal about that.?"
Oh my, where to begin? 
  Mexican food is like one big hug to your belly. 
It's like some little old Mexican granny out there somewhere said "That's right, I love YOU!" 

We have SEVERAL great Mexican restaurants in my hometown, but you know what, you don't have to go OUT from great Mexican food!  You can have a little fiesta of your own AT HOME! 
A great recipe to start with are these Weeknight Burritos!  They are simple, and SUPER flavorful!  Let me show you how I did it. 

WEEKNIGHT BURRITOS:
*Prep-Time: 15 min.  *Cook-Time:  30 min.  *Difficulty:  Easy  *Servings: 10 Burritos

Ingredients:


  • 1 lb. of ground beef
  • 1 onion, diced
  • 1 tbsp. garlic, minced
  • 1 c. corn
  • 1/2 c. rice, cooked
  • 1 15 oz. can of black beans, drained & rinsed
  • 1 15 oz. can of tomato sauce
  • 1 10 oz. can of diced tomatoes with chilies
  • 2 1/2 tsp. cumin
  • 2 1/2 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. oregano
  • 1/2 tsp. smoked paprika
  • Salt and pepper to taste
  • 2 c. Monterey Jack Cheese, shredded
  • 10 lg. flour tortillas
Tools:
  • Deep Skillet
  • Sauce Pot
  • Cutting board
  • Chef's Knife
  • Measuring Spoons

TO BEGIN,

Pre-heat your oven to 375 degrees.



 To prepare your burritos, you will need to cook your rice.

For a half a cup of rice, you will need one cup of water. 
Bring to a rolling boil.


Lower to a simmer, cover, and let cook for 15 minutes.
This would also be when you would dice your onion, mince your garlic,
drain and rinse your beans, open all of your cans, etc.


When your rice has finished cooking, and all of your ingredients
are prepped, place your skillet on a medium high heat.


Add a little oil to get things going.


Then add the onions. 
Allow them to cook until they are soft and translucent.


Now add your garlic.


Immediately add your spices.
1 tsp. of Cumin, Chili Powder, Oregano, and a 1/2 tsp. of Smoked Paprika.


Incorporate that well into your onions and garlic.
Let this cook for about a minute.
This will help wake up the oils inside of your spices
and get you the most flavor possible.


Once your spices are nice and awake,
you can add the ground beef.
You can also use chicken or turkey here. 
Whatever you like.


Work the onions, garlic, and spices into your meat
and let the meat cook fully and brown.


Once your meat has finished browning,
add the rice...


corn...


black beans..


diced tomatoes with chilies.


1/2 of the tomato sauce, and a pinch of salt and pepper.
Mix together, and allow to cook for a minute or two and allow
everything to heat through.


Now it is time to form your burritos.
You will want to remove the tortillas from the wrapper,
place them between two damp paper towels,
and microwave them for 1 minute.


Add a couple, healthy, spoonful's to the center of your tortilla.


Fold the bottom portion of the tortilla upward.


Then, fold the left side over.


Now the right.
It should resemble an envelope at this point.


Now roll everything upward, from the bottom.
It should look at little something like this.


Place it seam side down in a greased baking dish.


Continue with the rest of your burritos.


Pour the other half of your tomato sauce over the burritos.
(I used a can of dice tomatoes here because I ran out of sauce.)


Season the top with the rest of your garlic and chili powder,
as well as a little salt and pepper.


Place in the oven for 15 minutes. 


While your burritos are in the oven,
this would be a great time to shred your cheese.


Sprinkle cheese over the top of the burritos,
and...


Place back in the oven for another 15 minutes.


YUM!!!

Mexican has never looked so good and the best part is...
YOU DID THAT!

What I love about meals like this, is that they are a wonderful opportunity to get everyone in the kitchen.  Weeknight cooking doesn't have to be stressful.  Get the family in there with you, form an assembly line, and you will have this in the oven in NO TIME!

Directions:
  1. Preheat the oven to 375 degrees.
  2. Add the water to a sauce pan and bring to a rolling boil.
  3. Add the rice, lower to a simmer, cover, and let cook for 15 minutes.
  4. While the rice is cooking, chop the onion, mince the garlic, drain and rinse the black beans, and shred cheese.
  5. When rice is finished cooking, place your skillet on medium high heat, and add a little oil.
  6. Add onions and let cook until soft and translucent. 
  7. Add the garlic.
  8. Add a tsp. each of cumin, chili powder, and oregano.
  9. Add a half tsp. of smoked paprika.
  10. Stir into the onions and garlic, and let cook for about minute. 
  11. Add the ground beef and brown.
  12. Once browned, add the rice, the black beans, the corn, the diced tomatoes with chilies, and half of the can of tomato sauce.
  13. Mix together well and allow time for everything to heat through.
  14. Remove the tortillas from the wrapper, place between two damp paper towels, and microwave for 1 minute.
  15. Add two, liberal spoonful's of the meat filling to the center of your tortilla.
  16. Fold the bottom portion of the tortilla upward.
  17. Fold the left side of the tortilla inward, and then do the same with the right. 
  18. Roll the tortilla upward from the bottom into a little cigar.
  19. Place the burrito, seam side down, into a greased baking dish.
  20. Pour the other half of the tomato sauce over the burritos and season with the rest of the garlic powder, chili powder, salt, and pepper.
  21. Place in 375 degree oven for 15 minutes.
  22. Remove from oven and sprinkle the shredded cheese over the burritos.
  23. Place in the oven for 15 more minutes until melted and brown.
  24. ENJOY!
