Homemade Alfredo Sauce Recipe




*Sigh*...Pasta

I mean, really, need I say anything else?  Who doesn't love a big bowl of pasta?
No matter how you like it best, be it in mac & cheese, garlic & butter, spaghetti with marinara, EVERYONE loves pasta!  I am no different.  When I am having a rough day, or am feeling down, I have one go to dish that hits the spot every time...Pasta Alfredo!



This is honestly one of the easiest pasta sauces you can make, but I warn you, this is not for the calorie counters heart.  It is rich, luscious, and totally decadent!  Worth every calorie!  So let's not waste anymore time talking about it, let's get cooking! 


Pasta Alfredo:
*Prep-Time: 3 minutes  *Cook Time:  15 minutes  *Difficulty:  Easy  *Servings:  4-6

Ingredients:
  • 1 stick of butter
  • 1 pint of heavy cream
  • 1 tbsp. minced garlic
  • 2 c. of grated parmesan cheese
  • 1 lb. of pasta
  • Salt and pepper to taste
Tools:
  • Sauce pan
  • Whisk
  • Stock pot
One thing that I love about this dish is that it has minimal ingredients, but many ways you can prepare it.  In this post I am just going to prepare the basic pasta and sauce version, but you could add your favorite green vegetable, Italian sausage, chicken, the choices are endless. 



As usual, we are going to bring a pot of water to a boil for your pasta. 
Make sure you salt the water.  It should taste like the sea. 


I know that when you hear the word alfredo, you immediately think of fettuccini,
but I really like mine with farfalle. 
Again, there are no rules here. 
 Serve it up with whatever pasta you like.


Once your water is boiling, pour in the box of pasta. 
 Cook according to the directions on the box.
(I know this is a lot. 
I mean, I am just cooking for my husband and I,
but trust me when I say that this is even better for lunch the next day!  ;) )



While the pasta is cooking, we will begin the sauce. 
Yes, that is how fast and easy this will come together.
Place your pan over a medium-high heat.


When the pan is hot, add one stick of better, and
allow it to melt.


Once butter is melted, add the garlic.
Let the garlic cook until you smell it in the pan.


Then add the cream.


You will want to continuously whisk the cream as it begins
to cook and thicken. 


When you see it begin to bubble like this,
you will know it is time to add the cheese. 


Now, as a rule, I like to use fresh parmesan cheese when I cook,
but in this sauce, I have found that the powdered stuff works best. 
I KNOW, I KNOW, who would have thought, but it does.
I usually add it a palm full at a time, whisking until
smooth between each one.



When it is all said and done, you will have this beautiful
smooth, silky, creamy, cheese sauce. 
Yes, three ingredients, THAT'S IT!
At this point I will check for seasoning
and add any salt and pepper I think it needs.


When the pasta is finished, you will drain the water, add it to the pan,
and toss until all of your pasta is coated with this beautiful cheese sauce. 
I am talking every nook and cranny!




Top with a little extra cheese, maybe some parsley, and serve! 
Oh.My.Goodness! 
 Give me a fork and send me to Heaven!


As I said, you can add broccoli, spinach, peas, chicken, sausage, whatever you desire to this.
Or, you can simply eat it plain.  However, you choose to serve it, it will be a GUARANTEED crowd pleaser!
